    Farro, Avocado, Cucumber and Cherry Tomato Salad, CL 7/2008

    I made this CL recipe this week and mentioned it in the freezer/pantry thread. I was looking for an easy recipe that would use up the farro I had on hand, and double score called for an avocado (and I had one sitting on my counter). It was a new recipe for me.

    I thought it was so good that I thought I should give it its own thread. It has some of my favorite flavors.

    Farro, Avocado, Cucumber, and Cherry Tomato Salad

    Farro is a whole grain with a pleasantly chewy texture. Look for it at specialty markets and gourmet grocers or health food stores. With crunchy cucumber, sweet cherry tomatoes, and buttery avocado, this dish makes a refreshing lunch. Pair it with a simple starter soup and whole-grain crackers for dinner

    1 cup uncooked farro or spelt
    4 teaspoons extravirgin olive oil
    ¼ teaspoon fresh grated lime rind
    1 tablespoon fresh lime juice
    1 tablespoon white wine vinegar
    ¾ teaspoon salt
    ½ teaspoon black pepper
    2 cups red, orange, and yellow cherry tomatoes, halved
    1 ¾ cups chopped seeded English cucumber (about 1 small)
    ¼ cup fresh cilantro leaves
    ¾ cup sliced peeled avocado (about 1 small)

    1. Place farro in a large saucepan; cover with water to 2 inches above farro. Bring to a boil. Cover, reduce heat, and simmer 30 minutes. Drain and rinse with cold water; drain well.

    2. Combine oil, rind, juice, vinegar, salt, and pepper in a large bowl; stir with a whisk. Add farro, tomatoes, cucumber, and cilantro; toss gently to coat. Place about 1 cup farro mixture on each of 5 plates; garnish evenly with avocado. Serve immediately.

    Yield 5 servings

    You're welcome. If you try it, I hope you like it.

    It was a nice change to the my usual go-to whole grain salad.

    This is so yummy and just the type of thing that I like to eat for lunch. Thanks for pointing it out! I had all of the ingredients on hand and it was quick and easy to put together.

    Thank you for the review I discovered Farro last year and really enjoy it. This sounds like a wonderful summer salad.

    Sounds great, I haven't tried Farro as yet, just discovered Quinoa and am loving that. I may try your recipe with the Quinoa, OR may buy the Farro. Thanks for inspiring me!

    thought I had farro but wrong, it was wheat berries. I am not finding farro at my grocery store and can't remember where I found it before. anyone have a source? TJ's maybe?

    Do you have a Costco? That is where I get farro.

    I know it is not the same thing, but many times you can substitute spelt for farro. Maybe even barley if you have trouble finding either of them. However, I love wheat berries!

    I shop at costco every week... I will look for it ASAP. I know I got quinoa there, and it must be right near by. wow. that is so easy! Thanks!.

    No, it wasn't easy. Costco, at least the one here, doesn't have farro. they have quinoa and quinoa combinations but no farro. so I'll have to keep looking. Nuts. thought this would be simple.
