    Hawaiian appetizers

    I'm going to play Bunco on Thursday night with a bunch of women I've never met. The theme is Hawaiian and we are to bring a 'heavy appetizer' instead of dinner.

    Any ideas? Bonus if it is inexpensive and fast to make

    I apologize in advance for not having any specific ideas but think that Spam is popular in Hawaii. Cheap and quick, too Perhaps you could google spam appetizers for ideas?

    These were very popular at a luau:

    Planters’ Fresh Pineapple

    1 fresh pineapple
    ½ cup rum
    ½ cup sugar
    1 can sterno
    2 dozen small bamboo skewers

    Cut across the pineapple 6-7 inches from base. Use a small sharp paring knife and remove the fruit portion of te pineapple without cutting the rind. Cut the pineapple meat into bite size chunks and chill.
    Using the hollowed pineapple with a can of sterno in it as a centerpiece, arrange around it bowls of sugar and rum, pineapple chunks and skewers. Light the sterno. Spike a pineapple chunk, dip it into rum, then sugar and glaze it over the fire.


    Korean Pork Strips

    List of Ingredients



    1 lb. boned lean shoulder of pork, 1 1/2" x 3/4" wide
    1/4 t cayenne pepper
    2 1/2 T sugar
    1/4 cup + 1 1/2 t soy sauce
    1/4 cup chopped scallions
    2 T sesame seeds, toasted
    1/2 t ground ginger
    4 garlic cloves, minced
    2 T sesame oil

    Recipe


    Sprinkle the strips with cayenne and toss them in sugar
    In a bowl combine soy sauce, scallions, sesame seeds, toasted, ginger, and garlic.
    Add meat strips; let them marinate for 1 hr. Drain
    Brush them with sesame oil and gril them over hot coals or broil them for 5 min. on each size.
    Serves 8

    Lime-Marinated Scallops with Coconut Sauce

    ¼ cup strained fresh lime juice
    2 dashes Tabasco
    ½ t. salt
    ½ t. freshloy ground white pepper
    ½ pound scallops
    ¾ cup coconut milk
    ½ cup sour cream
    3 T finely chopped scallions

    In deep glass or ceramic bowl, thoroughly mix lime juice, Tabasco, sant and pepper. Drop in scallops and toss them about with a spoon until they are evenly moistened. Cover bowl and marinate in frig for at least 2 hrs., stirring occasionally until they are white and opaque, indicating they are fully “cooked.”
    Meanwhile combine the coconut milk, sour cream and scallions in a separate bowl. Mix well and refrigerate for an hour until completely chilled.
    Drain the marinade off scallops into a cup. Add the scallops and 1 T marinade to coconut and sour cream mix, rossing them together gently but thoroughly. Taste for seasoning and add more of marinade if you prefer. Arrange the scallops on serving dish.
    (In Hawaii, this dish is made from the native opihi – a kind of mollusk not usually available on mainland)

    These mini ham and cheese sandwiches served on King's Hawaiian Rolls are delicious. I think this would be a great appetizer and they would definitely forgive you if they aren't authentically Hawaiian! Easy to make and you can do them in advance and then pop in the oven when you get there.

    No recipe just and idea...would it be possible to grill pineapple chunks with ham or chicken and maybe some green pepper with a teriyaki glaze on a skewer? And then serve out of a hollowed out pineapple shell? Not sure if it is Hawaiian but is sounds like it to me...or maybe some mahi mahi pieces with a mango sauce? that's about it for me...

    I thought about Spam as well but I think I'm going to do Hawaiian chicken wings. There are a bunch of recipes on the web and they look quick and easy.

    The pork strips look great too!

    Even though you have made your decision, here is a recipe for a typical Hawaiian appetizer, found on Food Network.

    Lomi Lomi Salmon

    1 cup diced salted salmon
    5 medium tomatoes, diced
    1 medium round onion, diced
    1/4 cup thinly sliced green onions
    Sea salt
    1 cup crushed ice

    In a large bowl, cover the salted salmon with water and soak overnight. Drain and rinse the salmon.

    In a large bowl add the diced salmon, tomatoes, onion, and green onion, and mix well. Add sea salt, to taste. Chill and just before serving add the crushed ice.

    Chef's Note: if unsalted salmon is used, rub the salmon with sea salt or rock salt and let stand overnight, then use in the recipe. Recipe courtesy Bobby Nakihei at Bobby's Hawaiian Style Restaurant, Everett WA.

    I made Sweet and Sour Meatballs recently for an event, and they were really good. Mini meatballs with green pepper and pineapple chunks with a light sauce.
