You know, if they don't have discoloration (pink, green, orange, or grey) and an off smell when opened, I'd probably use them.
Is that the best buy date?
I agree if it looks ok it should be fine since you have to bake it
anyway. I cannot imagine them knowing to the month, an expiry date.
At worst, if you are nervous, call the company to ask.

Yeah, I'm pretty sure they're going to be off color or slimy when you open them. I have had that happen when things were only a couple of weeks past the date.
Most people are about as happy as they make up their minds to be.
Since they were at the back of the fridge they are probably are better off than if they were on the door. I'd open them like the others have said and smell them. I don't think you would get sick from eating them after they are baked, they just might be hockey pucks. I'd bake them out of curiosity - provided they aren't slimy and look okay.
I googled and came up with a similar Q&A to yours on the Pillsbury site. They basically said to toss it. I'd still be curious.

I wouldn't even open them, but I am pretty finicky about dates. Not much I do use past the date.
I've tried using low-fat crescent rolls past the date, and they didn't rise at all... just hockey pucks. I wouldn't waste the oven on them.![]()

I've used Pillsbury biscuits beyond the expiration date (not sure exactly how far, but definitely more than a few weeks), and they looked and tasted as good as you'd expect for Pillsbury biscuits. I guess all those preservatives are good for something![]()

Of course Pillsbury is going to say toss it. The liability they would incur if someone ate them past the date and got sick would be huge. Nevermind the fact that if people toss they need to buy more.
I'm pretty cavalier on these things but I think this one would be a toss for me too. A couple of weeks would be fine but this is multiple months. I'd be afraid of what I found inside and toss without even trying.
