    Zesty Shrimp and Black Bean Salad-EW-7-8/12

    This is a great salad. It is perfect for a hot summer week night; spicy, crunchy and great flavors.

    Zesty Shrimp & Black Bean Salad

    Amount Measure Ingredient -- Preparation Method

    1/4 cup cider vinegar
    3 tablespoons extra-virgin olive oil
    1 tablespoon minced chipotle chile in adobo (see Tips), or more to taste
    1 teaspoon ground cumin
    1/4 teaspoon salt
    1 pound peeled and deveined cooked shrimp (see Tips), cut into 1/2-inch
    pieces
    1 15-ounce can black beans, rinsed
    1 cup quartered cherry tomatoes
    1 large poblano pepper or bell pepper, chopped
    1/4 cup chopped scallions
    1/4 cup chopped fresh cilantro


    1.Whisk vinegar, oil, chipotle, cumin and salt in a large bowl. Add
    shrimp, beans, tomatoes, poblano (or bell pepper), scallions and cilantro;
    toss to coat. Serve room temperature or cold.

    Thanks for the review. It sounds perfect for this weekend because I have cilantro, a bumper crop of yellow bell peppers, 1/2 a container of cherry tomatoes and the tag end of a red onion I'll sub for the scallions. I love the idea of chipotle and cumin in the dressing.

    I think this might morph into a really nice potluck salad by adding some cooked pasta (shells maybe) and fresh corn kernels. The make-ahead part is definitely a winner.

    Steve made this last weekend with fresh off the cob corn. It was really, REALLY good!

    Just adding thumbs up on this one. Perfect heat, nice bright flavors. A real winner in our house.
    You can't drink rum on the beach all day if you don't start in the morning.
