    I usually grill or broil it - I like those flavors better in my salad, rather than poached. I keep it really simple [seasoning with just salt & pepper] so it doesn't overshadow the salad dressing or ingredients.

    I also use the poaching method and it always comes out moist and very tasty.

    To the water, I add 1/4 tsp each of celery seed, thyme, marjoram, sea salt, tarragon, lemon juice, and a bay leaf.

    It makes the chicken taste so good, and the broth makes terrific chicken soup.

    I have always used the Jeff Smith method...remember him?...the Frugal Gourmet.

    Put chicken in stock pot. (this is for a whole chicken)
    Fill pot with water.
    Take chicken out of stock pot.
    Put pot on burner, and bring to boil.
    Once boiling, put chicken back in pot.
    Once pot starts to reboil, cover pot and turn off heat. Leave pot on burner...leave chicken in water for 1 hour.

    Always cooks to perfection. This is so easy...takes about 5 minutes of your attention.

    This is what I used to do:
    Skin-on, bone-in chicken breast halves, cold water to cover plus 1 chicken bouillon cube (Knorr). Simmer 30 minutes.

    This is what I do now:
    Boneless, skinless chicken breasts trimmed of filet to make them thinner (filets go in the freezer) - I never, ever "flatten" chicken breasts.
    Rub chicken with spices of your choice and bake at 450° for 15 minutes.
