    Leftover Tofu?

    I saw a recipe for grilled tofu I want to try but I am not sure how to handle leftovers, either uncooked or cooked. How long will uncooked extra firm tofu keep in the fridge? Can it be frozen? Will grilled tofu reheat successfully? There are just two of us here and I hate wasting food so I sometimes avoid yummy recipes because the ingredients just don't store well or the cooked food doesn't reheat well.

    Tofu is a protein, so treating it like meat/dairy is fine.
    3-4 days refrigerated is fine.
    Freezing tofu changes its texture, but many people think it makes it taste more chewy.

    I had some leftover tofu last week that I wanted to freeze (I've read about the "chewy" texture, but thought it would be OK in scrambled eggs). I couldn't remember how you're supposed to freeze it though - tips? TIA

    Whenever I freeze tofu, I squeeze as much of the water out as I can, put it in a ziplock bag and freeze. The tofu has a meaty consistency after it is frozen.

    If it is water packed, I drain the water, toss the tofu in a ziplock and freeze; nothing else special (sometimes, I will dice it up so I can simply toss into something).
    When it thaws, it is sooooo much easier to get rid of all the water (no fancy cans/plates to press, just light squeeze).
    Since the composition changes, the water drains easier and (as noted) becomes a bit "chewier" to mouth feel.

    Worth a shot for any recipe you love to make and are willing to toss leftovers; freeze and see if it is acceptable...you can always toss it after it thaws

    Thanks, you two! I wrapped it tightly in plastic wrap but ended up cleaning out the freezer two days later and tossed it. Will keep in mind for next time.

    I blenderize it and use as a low fat cream sauce. It absorbs any flavors in your dish.
