    Grilled Pineapple-Avocado Salsa (CL, June '11)

    I was looking for something to do with some pineapple and this recipe caught my eye ..... had lime, cilantro, avocado. Bingo.

    I didn't make the whole recipe, and winged some of the amounts. And, bet it would be good even without the avocado. Shocking I know.

    I made it on my spacious patio, breaking in my new super sized grill. Oh wait, I made it on my electric stove. Still good.


    Grilled Pineapple-Avocado Salsa
    Cooking Light JUNE 2011

    Yield: 6 servings (serving size: 1/2 cup)

    Ingredients
    1 tablespoon olive oil
    1 tablespoon honey
    1 pineapple, peeled, cored, and cut into 1/2-inch-thick slices
    Cooking spray
    1/3 cup finely chopped red onion
    1/4 cup minced fresh cilantro
    1 tablespoon fresh lime juice
    1/2 teaspoon salt
    1/2 teaspoon ground red pepper
    1/4 teaspoon ground cumin
    1 serrano chile, minced
    1 avocado

    Preparation
    1. Preheat grill to high heat.

    2. Combine oil and honey, stirring well. Brush oil mixture over pineapple. Place pineapple on a grill rack coated with cooking spray; grill 2 minutes on each side or until golden. Remove from grill; cool 5 minutes. Chop. Combine pineapple, onion, and next 6 ingredients (through serrano); toss gently.

    3. Peel, seed, and dice avocado. Add avocado to the pineapple mixture, and toss gently.

    Did you serve with chips? What kind?

    This looks perfect for our Supper Club Caribbean appetizer this weekend.... i'm making Bobby Flay's Grilled Jerk Chicken with mango/cilantro relish, but would like to make an easy appetizer also....i think this will be great!

    I think this salsa was part of the Taco Party menu, right? We made that whole menu last year for a neighbor's birthday party and it all was fantastic! That salsa was great with the fish tacos from the menu.

    So you only ate it with the tacos not with chips/crackers?

    Yes, just with the tacos. It would be good with chips, too, though, I think. It is kind of a thick salsa, more like a pico de gallo (chopped up veggies) - not thin like a salsa you might get from a jar. I actually think maybe I did eat the leftovers with chips. Sorry, can't remember. Wonder what applecrisp did with hers?

    Mine was quite chunky (there is a pic of the recipe under CL's recipe section), just like cocoasmom said. And, it didn't have the "liquid" of the typical salsa. I used mine as more of a side.

    I had it along with flank steak.

    I've never had fish tacos, maybe I need to change that.

    Well maybe it is too close to the mango relish i'm doing.

    Any other ideas for a caribbean appetizer?
