In another thread, I recommended both Martha Stewart's Cupcakes and the Southern Living Big Book of Cupcakes. I made the Caramel Cupcakes from the Southern Living book and wanted to let you know of an error I found. The Butter Cake recipe that is part of the Birthday Cake and the Caramel Cupcakes (and others) says it makes 24. It is a moderately sized 12. Period. And that was fine -- I was just making them for us, but had I been making them for an event and not thinking about the amount of ingredients, I would have been caught off guard. If you need 24, double the cake recipe. Also, the cupcakes were done when they still looked pretty white. These are a butter cake -- not a yellow cake. Test them before they start to brown and don't expect a lot of color.
The flavor of both the cake and the frosting is very good. Just watch the quantity and check the cupcakes when baking. The frosting is enough for 24 cupcakes.
