    Talking OMG Peanut Butter Mousse Cake review

    I had a birthday party to make a cake for and this friend of ours loves peanut butter (as do I ) so I searched the board and found the epicurious recipe for the Peanut Butter Mousse Cake.

    Let me just say there are not enough WW points in the universe to have a piece of this cake..it was bad enough that I licked the rubber spatula!

    This cake is unbelievable if you are a peanut butter fan. The best part is it was pretty easy to put together. Then again, can you really go wrong with chocolate wafers, chocolate, peanut butter, cream cheese and heavy cream?

    PEANUT BUTTER COOKIE MOUSSE CAKE
    This recipe was developed by Houston pastry chef Pamela Manovich, with the help of Girl Scout Laura Watkins.

    For peanut butter mousse
    1 Box Peanut Butter Sandwich Girl Scout cookies
    1 1/2 cups cream cheese
    1 1/2 cups peanut butter
    1 1/2 cups sifted powdered sugar
    1 cup heavy cream

    For ganache
    1 12 ounce bag Hershey semi-sweet chocolate chips
    1 cup heavy cream

    Make peanut butter mousse:
    Crush cookies in food processor and set aside.

    Soften cream cheese, add peanut butter, and mix well. Add powdered sugar. Whip cream until soft peaks form. Fold whipped cream into peanut mixture and set aside.

    Make ganache:
    Place chocolate chips in bowl and set aside. Heat heavy cream until it starts to boil. Pour over chips and stir.

    Assembly:
    Use an 8-inch springform pan. As a first layer, spread half of the cookie crumbs on bottom, then pour on a thin layer (about 1/3) of ganache, enough just to hold cookie crumbs. Place half of the peanut butter mousse in the pan and spread over the ganache. Place the remaining cookie crumbs on top of the mousse. Place a third of the chocolate on top of the mousse. Place remaining mousse in pan, and finish cake with remaining ganache. Place in freezer for one hour. Remove from freezer, take out of pan, and serve.

    Makes one 8-inch cake.

    nope!

    Are you kidding? A box of g.s. peanut butter cookies would not last more than 5 minutes in my house!

    This recipe looks even more decadent than the one you posted.

    PEANUT BUTTER MOUSSE CAKE

    Crust
    1 9-ounce package chocolate wafer cookies
    1/2 cup sugar
    1 teaspoon ground cinnamon
    10 tablespoons (1 1/4 sticks) unsalted butter, melted
    Filling
    1 18-ounce jar creamy peanut butter (2 cups)
    2 8-ounce packages cream cheese, room temperature
    2 cups powdered sugar
    2 tablespoons vanilla extract
    2 cups chilled whipping cream
    Topping
    1/2 cup whipping cream
    1/4 cup sugar
    1 tablespoon instant espresso powder
    6 ounces bittersweet (not unsweetened) or semisweet chocolate, coarsely chopped
    1 teaspoon vanilla extract
    For crust: Preheat oven to 325°F. Blend cookies, sugar and cinnamon in processor to fine crumbs. Add melted butter and blend well using on/off turns. Press crumb mixture onto bottom and up sides of 10-inch-diameter springform pan. Bake until crust starts to puff and darkens slightly, about 15 minutes. Cool.
    For filling: Using electric mixer, beat peanut butter and cream cheese in large bowl to blend. Add powdered sugar and 2 tablespoons vanilla extract and beat until well blended. Using clean dry beaters, beat 2 cups whipping cream in medium bowl until stiff peaks form; fold into peanut butter mixture in 4 additions. Spoon filling into prepared crust.
    For topping: Combine 1/2 cup cream, 1/4 cup sugar and espresso powder in heavy medium saucepan. Stir over medium heat until espresso powder and sugar dissolve and mixture comes to simmer. Remove from heat. Add chocolate and whisk until melted and smooth. Whisk in 1 teaspoon vanilla. Cool topping 5 minutes. Spread topping evenly over filling. Refrigerate cake until cold, about 4 hours. (Can be prepared 2 days ahead. Cover cake and keep refrigerated.) Serve cake chilled.
    Makes 16 Servings.

    JeAnne, there is a special place in HE>> reserved for anyone that would post that recipe where a peanut butter lover like me could see it when she's desperately trying to lose weight!!

    OMG!! How in the world could you even sit up after eating a slice of that stuff! It sounds like Heaven! I can't even print the recipe, because if I do I would surely break down and make it!

    LOL! Both of you have me cracking up!

    I found that recipe on THIS BOARD..gosh darnit! And here I was looking for something I wouldn't feel guilty about

    I will not have a slice ...however it took my husband to remove the bowl from my PMS death grip ...I would definitely have gone there after the rubber spatula


    Oh and for the record I was standing up fine...and with a huge fat induced smile on my face!

    You know I was only joking - I have been dying to use that graphic, and this just seemed like the right moment!!!! Please, have a piece for me as well. OH, and I hope I can speak for Jewel - tell your DH to have 2 pieces for her!!!!!!

    I can't believe it! My birthday is November 3 and that's the cake I want! I printed out the recipe from Epicurious and mailed it to her! Every year we makes each others birthday cakes. This is the one I want!!! My mouth is watering thinking about it. I LOVE peanut butter!!!

    Okay, now that we're all hooked and we all want that cake, anybody have a girl scout in the house? Is there a girl scout website where you can order the tagalongs (my favorite cookie, by the way) when the scouts aren't doing their sales? Aaaaaah! Tastycake has a peanut butter chocolate cookie, but it's more cake-like; don't know what kind of "crumbs" it would make. Thoughts, anyone?

    I'm not a peanut butter fan (gasp!), so forgive me if I blaspheme (is that a word?) the good name of the Girl Scouts' peanut butter cookies by suggesting Nutter Butters as a substitute?

    Or, you could make JeAnne's cake, and then try the other one when Girl Scout cookie season rolls around.

    Sounds like a plan, Aggie94. Actually, I just was having fun -- since I really need to dust off my Weight Watchers books, I don't think I'll be making either in the near future. Evil one that I am, I sent both recipes to some friends; hopefully they'll make it and invite me over! That way, I won't have the whole thing in the house!

    Of course this was all said in fun. I have printed out that decadent recipe and will make it one day for guests, when the need to indulge comes upon me. Now, who can I invite over this weekend??

    Wink another recipe option for peanut butter lovers...

    This thread is too funny!

    At the risk of being boiled up in a kettle a la funnybone's graphic... I offer yet another decadent peanut butter dessert recipe. I've made this twice, it's great and pretty easy, and it might be a smidge lighter than the recipes posted above (e.g. only a billion calories and fat grams, instead of a gazillion). The one thing that didn't work for me was using peanut butter to bind the crumb crust... I just used butter. YUM!

    Chocolate Covered Peanut Butter Pie
    recipe by Emeril Lagasse

    Ingredients

    2 cups crushed chocolate cookies (Graham crackers, oreos or chocolate wafers)
    1 cup plus 1 tablespoon peanut butter, in all
    1/4 pound cream cheese
    3/4 cup powdered sugar
    2 tablespoons milk
    2 tablespoons chopped peanuts
    2 3/4 cup heavy cream, in all
    6 ounces semi-sweet chocolate, chopped

    Directions

    Preheat oven to 350 degrees F. In a mixing bowl, combine the cookie crust with 1 tablespoon of the peanut butter. Combine the mixture thoroughly and press into a 9-inch springform pan. Bake the crust for 8-10 minutes.

    In an electric mixer with a whip attachment, whip the cream cheese and sugar until smooth. Add the remaining 1 cup peanut butter, milk and nuts and whip for 1 minute. Turn the peanut butter mixture into a mixing bowl. Whip 2 cups of the heavy cream and fold into the peanut butter mixture. Pour the filling into the prepared crust and refrigerate for 2 hours or until the pie is set.

    In a sauce pan, over medium heat, melt the chocolate with the remaining cream, stirring constantly, until the chocolate is completely
    melted. Remove from the heat and cool for 2 minutes, stirring constantly.

    Remove the pie from the springform pan and place on a wire rack over a baking sheet lined with parchment paper. Pour the chocolate topping over the pie, covering the top and sides completely.
    Refrigerate the pie for 2 hours or until the chocolate coating is set.

    Okay, I'm scarin' myself, here....but I have to ask this question, NOT because I am PLANNING anything like making this dessert or anything like that, just curious, that's all. (Yeah, right)

    What's a chocolate wafer cookie? Is that like those long and skinny quilted top looking things filled with cream? They'd come in a slab and you'd break them apart? That they used to give us in Sunday school in 1964? Or is it something else?

    Of course, it really doesn't matter because I am NOT going to make this dessert. I'm just curious....

    You can get the chocolate wafer cookies in a sleeve in the dessert toppings section of your grocery store. Don't bother looking for them with cookies - they're never there! Somehow, they've earned a place among ice cream toppings, and ice cream toppings only!

    AHA!!!

    So that's where those chocolate wafer cookies have been hiding! I make a chocolate cheesecake that uses them for the crust and haven't been able to find them for a long time so I started substituting oreos that I grind in the FP.
