Cooking Game of the Week #75 01/16/2013

Woo hoo! Mine is bursting at the seams and always at the ready

Mine was doing the same till last week. I emptied it That is ok tho, the originals are still in their binders. Tonight DH helped me with about a weeks worth of food related e-mails. He marked 7 of the recipes we printed out with "make this week" Oh and 1 for when the grandkids come over. We have such fun when we do that together.

Hmmm, I do have some apples to use up. I'll have to think about this. I'm at a real low cooking point right now. It's pretty pathetic!

R is for Rachael Ray

In this months issue of her mag., they have an article called "A Year of Chocolate Desserts" (I know, I'm being bad again) This is January's.


One-Bowl Mocha Cake
Makes: 16 servings

1 1/2 cups (packed) brown sugar
1 cup flour
6 tablespoons unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 teaspoon pure vanilla extract
1/2 cup brewed cofffee
1 4 ounce stick unsalted butter, melted
1/2 cup mini semisweet chocolate chips
Confectioners' sugar
Whipped cream

Preheat oven to 350 degrees . Grease 8-inch square baking pan, line with parchment, then grease parchment. In bowl, whisk brown sugar, flour, cocoa, baking soda and salt. Make a well in center. Whisk eggs and vanilla into the well to blend. Gradually whisk in coffee and butter, then whisk in surrounding dry ingredients. Stir in chocolate chips; transfer batter to pan. Bake until toothpick inserted in center comes out clean, about 40 minutes. Let cool in pan on rack. Dust with confectioners sugar. Cut into 16 squares; serve with whipped cream.

Another Rachael Ray recipe. DH made this tonight for dinner. He used ground beef and marjoram and the rest according to recipe. Very DELICIOUS!!!!!!!


Greek Meatballs and Toasted Orzo

4 cups chicken stock (32 ounces)
2 slices white bread, crusts trimmed
Milk, to soak bread
1 pound ground beef or lamb
1 egg
Salt and pepper
1 teaspoon dry oregano or marjoram
1/4 cup mint, finely chopped
1/2 cup parsley, finely chopped, divided
3 tablespoons grated onion
2 large cloves garlic, grated or finely chopped
2 teaspoons lemon zest
1 box chopped frozen spinach, defrosted and wrung dry
Extra virgin olive oil (EVOO), for drizzling
3 tablespoons butter
1 1/2 cups orzo pasta
Juice of 1 lemon
1 cup feta cheese, crumbled

Serves 4

Warm the stock in a medium size saucepot and pre-heat the oven to 400ºF.

In a small bowl, soak the bread in the milk.

Place the meat in a mixing bowl and add the egg. Wring out excess the milk from the bread and crumble into the meat bowl. Season the meat with salt, pepper, oregano or marjoram, mint, half the parsley, the onion, garlic, lemon zest and spinach. Drizzle EVOO once around the bowl and mix the meat with your hands. Roll 20 meatballs and arrange them on a nonstick or parchment-lined baking sheet. Bake for 15-18 minutes, until cooked through and browned.

Meanwhile, melt the butter in a saucepot over medium to medium-high heat and add the pasta. Brown until nutty and fragrant and deep golden in color. Stir in a few ladles of warm stock and allow it to almost cook away before adding more, like preparing risotto. Keep adding stock a little at a time until it’s all incorporated and pasta is al dente. Stir in the lemon juice and feta cheese.

Serve the orzo in shallow bowls topped with meatballs.
