How do I know my brownies are done . I don't want them to be too moist nor too hard. The baking time vary every time I bake them. Any sure shot method to get consistently good ones.
It's best to remove brownies from the oven, to a wire cooling rack, when the top is slightly soft when touched in the center of the pan. Residual heat, while cooling, will cause them to be too hard if baked until they are firm in the middle.
