    Question Rice cooked in Coconut Milk

    For those of you who cook your rice with low-fat coconut milk -- Do you replace all of the water with the coconut milk or just a portion of it?

    I would think you'd replace all of it. Sounds yummy

    There's two ways I have gone about this.

    1) yes, cook the rice entirely in coconut milk (or as close to it as you can... don't open an extra can for it)

    OR

    2) Follow the instructions below for a creamier rice:

    1 cup rice
    1 can coconut milk
    water

    Reserve 1/2 cup of coconut milk. Pour remaining coconut milk and water (enough to make 1 1/2 cups total) in a medium saucepan. Bring to boil and add rice. Cover. Simmer covered for 1/2 hour. After 1/2 hour is up, add remaining coconut milk and cook an additional 15 minutes. Let rice sit for 10 minutes before serving.

    Thanks so much. I'm stopping at the store tonight to buy some coconut milk so that I can try this. I kind of thought you should replace all of the water, but figured I'd better ask since my "experiments" don't always turn out so good.
