    Talking What goes well with sundried tomatoes?

    Hey,

    I am doing a variation on a bread I make regularly. Usually I just throw in some cooked minced garlic into the mixture, however, this time I want to through in some sundried tomatoes. What would go well with this that I can throw in also? Whether it be onion, olives and even a spice/herb. Any ideas anyone?

    shaved parmesan cheese (the good stuff)
    caramelized onions

    Erin C. posted a recipe for a yummy sundried tomato bread. You could "borrow" some of her ingredients and put them into your bread. I have been meaning to try this for so long. Since I have today off I think I'll do it. Here is the recipe.

    ErinC's Spinach, Feta & Sundried Tomato Bread
    Made this again this past weekend and just had to bring it back up - such an amazing recipe - thanks again Erin!

    Spinach,sun-dried tomatoe,and feta bread
    *3 cups flour
    *1 tbsp. baking powder
    *1/2 tsp. baking soda
    *1 tsp. salt
    *2 tbsp.fresh chopped oregano (I used fresh basil)
    *2 tbsp sugar
    *1 cup chopped feta (light feta works well too)
    -----------
    *2 eggs beaten
    *1/2 cup olive oil
    *2 cups buttermilk
    *10 oz package chopped frozen spinach (defrosted and all water pressed out)
    *1/2 cup (I use 3/4 cup)minced sundried tomatoes...oil packed or blanched dry ones
    ------------
    1. Preheat oven to 350'
    2. Combine flour,baking powder and baking soda,salt,sugar,oregano and feta cheese in a large bowl
    3. Mix eggs,oil,buttermilk,spinach and tomatoes(mix well)
    4. Add liquid mixture to dry mix and stir until combined
    5. Grease and flour a 9 or 10 inch spring-
    form pan...pour in batter and spread evenly
    6. Place in middle of oven and bake for about 1 hour, or until a knife comes out clean.

    Hope you enjoy this and sorry it took so long for a reply! This bread also freezes well...I cut it into wedges first.

    I'd like some recipes using sundried tomatoes myself!

    On my trip to Costco today, I bought a jar of them; they are beautiful! Now I just have to decide what to do with them. Any ideas are appreciated.

    I made that bread to go with dinner last night and love it. If you like spinach you will love this bread. It went alright with dinner, but I think it would be better suited with soup or salad. It just has so many flavors going on that they get muddled up with a full meal.

    Black olives. There's a bakery in Stratford that makes a sundried tomato and black olive bread... no one but local regulars ever gets it, because you order it ahead of time and every single loaf always sells out.
