    "Drum Roll please........" NEW Vegetarian Sandwiches Cookbook:)WAHOO

    I am soooo excited. This is one of the prettiest cookcooks Ive gotten since the book I got about buying fresh veggies at the farmers market and doin' stuff with them If anyone is interested in certain types of sandwiches, the table of contents, etc, would be HAPPY to comply

    It is by Paulette Mitchell. It has wonderful photos. In fact, the staff at Barnes and Noble was impressed with the cover and wanted to know where I found out about it

    That sounds so good. I am always in search of vegetarian sandwiches. Right now my favorites are a mock tuna (made with mashed up cannellini beans), a carrot salad, and grilled veggies with some mozzarella or goat cheese.

    So, what are some promising recipes? Do tell

    that just sounds so ideal - I am wishing I were in my bed, with my DH and kitty, reading a cookbook. [but I am in class, shhhhhh.]

    Holly, yes, that is the book. It really was inexpensive (IMHO)

    Catherine, Here are some of the items:

    There is a whole section on Appetizer Sandwiches, including several on bruchetta and crostini.
    Cold Sanwiches:
    Vegetarian Pan Bagnat ,Sweet Potato and Avocado Sandwich
    Warm Sandwiches:
    Grilled Portobello Mushroom Sandwiches with Sun-Dried Tomato and Goat Cheese Spread; Baked Asparagus Toast with Zesty Cheese Sauce; Tempeh Reubens; Croissants Stuffed with Herbed Scrambled Eggs, Spnach, APples and Brie;
    Stuffed, Rolled and Wrapped Sandwiches:
    Middle Eastern Pita Pockets; Marinated Fresh Mozzarella, Tomato and Basil Salad in Pitas;
    Then there is a section on sandwich accompaniments, and a section on DESSERT SANDWICHES:
    Chocolate Chip Ice Cream Sandwiches; Chocolate-Filled Baked Frensh Toast Sandwiches

    Most recipes and to serve 2 or 4, and dont seem to have lots of ingredients. Any you want to see?????

    Hmmm... all of them? Just kidding. I had already planned on a stop by B&N on my way home from work tonight to pick up a new CD. I'm going to try to pick this up as well. Thank for the recommendation!!

    ditto! i read the reviews on amazon and it sounds great. they paired it with vegetarian lunchbox. is anyone familiar with that book? i really need a breath of fresh air with lunches and easy sandwichy dinners. thanks for the tip!

    Kim - would you mind posting the portabello & goat cheese recipe when you have a chance in the mean time? I had such good luck with the portabello reubens from Moosewood, and this sounds really yummy!

    Grilled Portobello Mushroom Sandwiches with Sun-Dried Tomato and Goat Cheese Spread
    Makes 2 sandwiches
    Sun-Dried Tomato and Goat Cheese Spread
    2 T Milced oil packed sun dried tomatoes
    2 T fresh white goat cheese at room temperature
    1 T red wine vinegar
    1 clove garlic, minced
    Pinch of sugar
    Pinch of red pepper flakes
    Salt to taste

    2 large portobello mushroom caps
    2 1/4 inch thick red onion slices
    olive oil for brushing
    salt and pepper
    2 crusty french rolls, halved horizontally
    2 T fresh Parmesan cheese or very thinly sliced provolone
    8 arugula leaves


    To make the spread
    Process all ingredients in a food processor until nearly smooth. Taste and adjust the seasoning.

    Prepare an outdoor grill for cooking. Brush the rounded tops of the mushrooms and the onion slices with olive oil. Arrange them, oiled sides down on the grill rack about 6 inches from medium-hot coals. Cook for about 3 minutes, brush the other side with the additional oil, then turn. Cook for about 3 minutes or until tender and lightly browned. Transfer to a plate and sprinkle light;y with salt and pepper. Cover to keep warm.

    Spread the mixture on the cut sides of each roll. Add cheese to the bottom ha;f of each roll, then top with the following layers: arugula leaves, onion slices, and a mushroom cap. Top with the upper half of the rolls. Fasten each sandwich with a long sandwich pick and cut in half.

    The spread will keep up to 5 days in a covered container in the refrigerator.

    i had to order it too but i stopped at the library on the way home and, tada, they had the veggie lunch box. it looks good too. i'm on spring break now so i have time to play thanks, too, for posting the grilled portobello sandwich.

    You too? I have her 15-Minute Vegetarian Gourmet cookbook too. It has lots of really good soup and salad recipes.

    As requested:

    Sweet Potato and Avocado Sandwiches with Tahini-Poppy Seed Spread

    Spread
    1 T tahini
    1 T plain yogurt
    2 t lemon juice
    1/2 t honey
    1/4 t poppy seeds

    1 small orange fleshed sweet potato, peeled and cut into 2 inch thick slices
    4 slices whole wheat bread
    4 1/8-inch thick slices red onion
    1/2 small avocado, peeled, pitted and cut into 1/4 inch thick slices
    4 1/4 inch thick tomato slices
    salt and pepper to taste
    1/4 c shredded Mont. jack cheese
    Finely shredded lettuce or alfalfa sprouts as desired

    To make the spread
    Whisk all the ingredients together in a small bowl


    Cook the sweet potato slices in salted boiliong water until fork tender, about 15 minutes. Drain and rinse with cold water, then drain again. Let coo, then cut the slices into six 1/4 inch thick slices.

    Lightly spread the tahihi mixture on one side of 2 bread slices. Top each with half the onion, avocado and tomato; lightly sprinkle with salt and pepper. Add layer of half the sweet potato slices, cheese and lettuce or sprouts. Top with the remaining two bread slices. Slice sandwiches in half. Fasten with a decoreative sandwich pick.

    From Lean and Lucious and Meatless, Volume 3 – Bobbie Hinman and Millie Snyder

    Great Northern Mock Tuna Salad
    This high-fiber salad is another delicious tuna taste-alike. Try it in a sandwich or piled on a toasted bagel.
    Makes 4 servings


    1 1 pound can Great Northern beans, rinsed and drained [I have used Cannellini beans with good results]
    2 T. finely chopped onion
    2 T. sweet pickle relish
    1/3 c. finely chopped celery
    1 T. plus 1 t. reduced calorie mayonnaise
    Dash garlic powder
    Salt and pepper to taste

    Place beans in a medium bowl and mash with a fork. Add remaining ingredients and mix well.
    Chill several hours to blend flavors.

    per serving - 99 calories, 2g fat, 5g prot., 15g carb, 298 sodium, 2 mg chol.

    Thanks so much for recommending this cookbook! I got it from amazon.com a couple of days ago. I've marked a gob of recipes to try.

    I made the first this afternoon for lunch (okay -- a lot later than I'd originally planned): the Grilled Portobello Mushroom Sandwiches with Sun-Dried Tomato and Goat Cheese Spread . It was so very, very yummy! I made it even easier by using sun-dried tomato paste (in a tube) vs. messing with the tomatoes themselves. As a result, I didn't need to dirty the food processor... I just mixed everything up with a fork. Additionally, I just prepared the portabellos in the oven (used Moosewood instructions). Anyone that likes goat cheese & portabellos really needs to give this a try!

    Mock Tuna

    I make a similar mock tuna to Catherine's recipe with chickpeas and green onions. One of the few things I miss from my meat-eating days believe it or not are tuna melts and I find this mixtures make an adequate substitute!

    Add some shredded cheddar cheese (or soy cheese if desired) to the mix itself, or on top of the spread in an "open faced" sandwich and broil until cheese melts.

    My sister used to make that recipe (mock tuna from the Hinman book) and I love it! Mmm...thanks for the reminder to make it soon!

    But I should mention, for those who have not made it, that this does not taste like tuna (IMHO). In fact, my sister cannot abide tuna, but loves this recipe...so what does that say?

    I too have 15-min Vegetarian Gourmet. I just got it recently and haven't tried too many recipes from it so, I would love to get suggestions of what to try from you. I liked the ginger stir-fry (or something along those lines) and the pasta salad primavera. Thanks.

    Also, thanks everyone else for the reviews on the sandwich book, looks like I may need that one too!

    i picked up my book yesterday and made the eggplant with black olive tomato spread (not the name) and it was good! thanks again for the tip about this cookbook!

    i didn't do so bad with the name it's grilled eggplant with black olive-tomato spread on focaccia p. 62. i just posted the recipe on the cookbook challenge thread.

    Hi,

    Would it be possible to get a few recipes from this cookbook. I was interested in the Vegetable Pan Bagnat, Middle Easter Pita pockets and the Mozzarella, Tomatoe and Basil in Pita? I making a Mother's day "Healthy Lunch in a box" and I thought I could make homemade pitas with a healthy filling. Any additional ideas are also welcome. Thank you!

    i have the middle eastern pita pockets picked for next weeks lunches! i don't have the cookbook at work but i can post tonight if still needed.
