    Thumbs up Rev: Pasta and Greens with Olives and Feta

    Made this dish tonight from the April C/L for my parents and I. My farm market didn't have radicchio so I substituted Brocoli Rabe. Also I forgot to serve it with lemon wedges but we didn't miss them.

    Dad's not a big Broccoli Rabe fan but that didn't stop him from having seconds. Mom rated it an 8 on a scale of 1 to 10 and I'd give it a 7 or 8 too. Definitely a make again - my only complaint - pitting those olives took a while.

    Oh - almost forgot - these were nice size servings. Hope you enjoy it.

    BTW, how do you pronounce RABE? One or two syllables?

    It should be two - ra-bay (not sure where the accent is - I always mess that up in Italian). Also, a bit of trivia, in Italy it's called Rape pronounced Ra-pay but b/c of the spelling of the word and the english definition they changed it to Rabe when they started to import/grow the vegetable in this country.

    We had this for dinner tonight and I was very pleased with the results. However, the olives were a pain to pit! I had gotten home late from work so I had to recruit DH's help to get the olives prepared. It was an interesting combination of flavors... a slightly bitter taste from the radicchio, tangy & salty feta cheese, olives, spinach and garlic. A yummy vegetarian dinner! I served it with Bruschetta and sliced strawberries.

    I made this last night, too, with whole wheat fusilli and I loved it! I nearly doubled the amount s of spinach and radicchio called for, but I cooked the radicchio for about 5-7 minutes to mellow out the bitterness. I thought this was such a great combination of flavors, and I especially like the savory oregano and the spicy red pepper with it. I'll very likely make this one again.

    broccoli raab or broccoli rabe (räb) n.

    A vegetable plant (Brassica rapa) related to the turnip and grown for its pungent leafy shoots. Also called rapini

    THis was a success last night and I was a bit dubious: DH doesn't care for either olives or bitter greens. We had enough leftovers that he had an alternative, but none needed- he ate it up and then some!

    I used Swiss chard and spinach; whole wheat Cavatappi for the pasta; the olives were pitted and stuffed with almonds, and I just sliced those right up. Also at least doubled the garlic. Hmm- just realized that I also forgot the lemon wedges- guess it wasn't missed!

    Like Peggy, I loved the combination of flavors- spicy red pepper, bitter greens, creamy feta, tangy olives, and in my case, slight crunch from the almonds. A definite repeater. A simple spinach, tomato, red pepper salad made the meal complete.

    Cold leftovers are delicious, too!
