THis was a success last night and I was a bit dubious: DH doesn't care for either olives or bitter greens. We had enough leftovers that he had an alternative, but none needed- he ate it up and then some!
I used Swiss chard and spinach; whole wheat Cavatappi for the pasta; the olives were pitted and stuffed with almonds, and I just sliced those right up. Also at least doubled the garlic. Hmm- just realized that I also forgot the lemon wedges- guess it wasn't missed!
Like Peggy, I loved the combination of flavors- spicy red pepper, bitter greens, creamy feta, tangy olives, and in my case, slight crunch from the almonds. A definite repeater. A simple spinach, tomato, red pepper salad made the meal complete.
Cold leftovers are delicious, too!
