    Interesting Rice Tidbit......

    In the food section today was a little blurb about rice. I thought it was interesting and wanted to share with all of you.

    "When you're holding cooked rice until serving, a dish towel placed under the lid will keep condensation from dripping back into the rice and making it soggy. One variation on the absorption method calls for cooking the rice with the towel in place."

    I actually do this -- except with a doubled-up paper towel. After cooking, I let the pot with towel stand for 5 - 10 minutes. It makes the rice much more consistent.
