    YUM!!!!

    Made this last night as I had everything at home and wanted something to take to the beach today!

    This rocked! I cut up the chicken, mixed the spices in a zip lock and coated the pieces that way instead of just sprinkling...I wanted more coverage

    DH and I both really enjoyed this. Next time I would add a touch more vinegar it needed a little more tang to balance out the sweet IMO. This would also be wonderful on top of cous cous or barley as it's plenty "wet" enough..don't want to waste any of that flavor!

    We're not big salad people, and this was unusual enough to want to try. I'm glad I did! It looked exactly like the picture and the serving was a pretty good size. WW: 5pts.

    Thanks for posting your review, JeAnne - I just received my CL last night, and have only read through it quickly, but this was one of the recipes that caught my eye. It'll go on the list at my weekly meal planning session over breakfast in the morning.

    We had this for dinner last night. I took JeAnne's advice and cut up the chicken and tossed the pieces with the spices. This was a very good recipe. Very easy and delicious.

    Thanks for the review! I'm making this salad this afternoon for a picnic at the lake and now I'm even more excited. Great way to use up all those grapes I bought because they are on sale.

    I made this for dinner tonight, and it was very good. I wonder though if I was missing something, as I only had regular chili powder on hand, not ancho, and I also used Penzey's Half-sharp paprika (read: spicy!), instead of regular paprika. I was out of onion powder too, so I just omitted it. I guess I'm going to have to make this again with the right spices, as I thought this was very good, but not GREAT as I had expected from the great reviews. My DH gave it a 6.5, I gave it an 8, but I bet it would be a 10 if I had used the right spices.

    One other question - no one mentioned whether they served this with anything else or just by itself? It seemed a VERY sparse dinner tonight, having just served the salad. I think my dinner needed something else, but couldn't come up with anything. Any ideas, anyone?

    I can't believe it took me so long to make this! To borrow JeAnne's word: YUM!!!

    I cooked the chicken and prepared all of the ingredients this morning before we played golf. All I had to do to get dinner ready was cut up the chicken and stir. What a great meal after a hot day of golf!

    My subs/changes: Only used green grapes, used Penzeys medium chili powder instead of ancho ('cause I didn't have any), used frozen OJ instead of the real stuff, was stingy with the mayo and generous with the vinegar & OJ, and omitted the walnuts. I'd do it the same way next time (unless I have ancho chili powder on hand the next time). And there will DEFINITELY be a next time.

    Grace: we didn't have anything with the salad, and I'm guessing we only have 1 serving left, (so we both had about 1.5 servings each). I think it would be nice with a sweet bread - like King's Hawaiian Rolls.

    I made this Friday night and grilled the chicken instead of broiling. The only change I made, was to use onion salt since I had no onion powder, and then I omitted the salt. I liked the contrast between the green and red grapes. I did have ancho powder and i loved the flavor it gave.

    With it I served corn bread and butter, and a plate of fresh veggies.

    I finished the salad tonight.

    I wanted to dredge up this thread to give a thumbs up to this recipe.

    I've been trying to find good recipes for healthy salads to eat at lunch, and this one is great. Very refreshing - I think it would be good over a bed of lettuce as there is quite a bit of "dressing."

    Yum! I definitely will repeat this.
