a friend of mine from california is coming to visit in a few weeks; she's on a low-carb diet right now. she can't eat noodles, pasta, or rice. i'm looking for ideas for entrees to make her during her visit.

Does she eat veggies or fruit? Both of these have carbs but they are the complex ones.

If she wishes not to eat rice, pasta, potatoes, etc., I'd simply make whatever you normally make, add an extra serving of a green veggie and make the rest as you would for your family.
There are several websites that discuss low-carb eating as well as books like Atkins or Zone...as well as books with catchy titles like eating the low-carb way or things like that.....
For example, if you make, say, a chicken and rice dish, you can also have a salad and broccoli side and she can just skip the rice.
Or if you make broiled salmon with couscous and a salad, simply have a serving of spinach or broccoli or asparagus or something....
For breakfast, have eggs and cottage cheese available.....

How about the recent BBQ Chicken and Grape Salad? It received many postive reviews and we enjoyed it as well. My neighbor's kid is on that kind of diet and I was asked for the recipe.
Does anyone have this in MC? Sorry, it's not in the recipe finder and I couldn't locate a copy by doing a search.

Just wanted to point out, if she is on a strict carb-less diet, veggies like corn and peas will be out, as will things like barbaque sauce, lots of salad dressings, ketsup....any sauce that has cornstarch, flour or sugar.

sneezles, yes, i believe she does eat fruits and veggies; the portions are very controlled, though. wallycat, good idea on simply having an extra purely-vegetable dish or salad on top of what i usually make. now, why didn't i think of that?shoyski, thanks for reminding me about that bbq chicken and grape salad! and kwormann, i definitely have to ask her exactly what she eats and doesn't eat. that'll give me a better idea as to what ingredients i can play with.
