    Not well, need comfort food!

    Hey guys,

    I'm not feeling too hot today (dicky stomach), so dinner tonight is anyones guess.

    I guess I'm looking for some nice comfort food, so I'm craving a nice chicken breast of some sort ... perhaps honey garlic ... or herbed ... something! Any ideas. Just nothing spicy!

    I'd love a good recipe for honey garlic is there is any out there. Or a recipe that uses fresh rosemary as my rosemary is growing like crazy.

    For sides I'll probably do roasted butternut squash mashed potatoes ...

    Do you mean "icky" stomach? Or is dicky stomach somethig I need to worry about??? I've got the giggles again today...

    Could you roast some chicken breasts and use the rosemary in that, maybe the slashing technique like in Psycho Chicken?

    YP, How about this one that Loren posted a while back? I'm sure you could throw in some fresh rosemary from your garden. Hope you feel better soon! Kim

    This recipe is from the WW cookbook, Take Out Tonight. This chicken is the best I've had in ages! I am rating it a 21 21 on a scale of 1 - 10.

    Lemon-Garlic Roast Chicken

    1/4 C. fresh lemon juice
    1 1/2 T. extra virgin olive oil, divided
    3 cloves garlic, minced (I used 4 really huge ones)
    1 tsp. oregano
    1/2 tsp. marjoram
    3/4 tsp. salt, divided
    1/4 tsp. freshly ground pepper
    4 skinless, bone-in chicken breasts (I'm sure it would be fine with boneless too)
    1 pound small red potatoes, quartered (I used the teeniest ones in the bag of baby reds and left them whole)
    1/2 C. water

    1. Preheat oven to 425 F
    2. Combine the lemon juice, 1 T. of the oil, the garlic, oregano, marjoram, 1/2 tsp of salt and 1/8 tsp. pepper in a large bowl (I used a ziploc). Add the chicken, tossing well to coat and marinate 20 minutes (I marinated for 3 hours but I didn't plan that!!)
    3. Meanwhile, combine the remaining 1/2 T. oil, 1/4 tsp salt and 1/8 tsp pepper in a medium bowl. Add the potatoes and toss well to coat. Place a wire rack in the center of a large rasting pan. Arrange the potatoes around the rack and roast 20 minutes.
    4. Remove the chicken from the marinade, reserve marinade. Remove the potatoes from the oven and plae the chicken on the wire rack. Add the water to the reserved marinade and pour over the chicken and potatoes. Roast chicken and potatoes 20 minutes, baste with the pan juices. Return the pan to the oven and roast until the internal temperature is 170 F. (I didn't need the last 20 minutes, my chicken pieces were done. The potatoes were done, too, since they were small.)

    LOL - I think it might be a British expression, but then again, I could be wrong.

    Not sure what could help for that type of stomach problem, but for me, soup (mostly broth) and crackers are always good.

    The Light Honey-Mustard Chicken Salad from 7/01 sounds like it would be good for what ails you.

    Sorry your not feeling so good. Here is a old recipe from BA, very easy.

    Honey-Soy Sauce Chicken

    1/2 cup soy sauce
    2 tab. honey
    2 tab. dry sherry
    2 garlic cloves, minced
    8 chicken thighs or breast (4)

    Combine first 4 ingred. in large bowl. Add chicken & toss to coat. Cover & refrigerate 4 hours or overnight, turning occasionally.

    Transfer chicken & marinade to heavy large saucepan. Bring to boil over med-hi heat. Reduce heat & simmer gently until chicken is just cooked through, turning occasionally, about 20 min. Serve w/rice, or pasta.

    Or here is one from 98 CL Annual, Lemon-Herb Grilled Chicken, Corn on the Cob, & onions. You could omit the veggies if you didn't want them and just go with the tasty herb marinade.

    1/2 cup dry vermouth or dry white wine
    1 tab. chopped chives
    1 tab. chopped fresh oregano
    1 tab. chopped fresh rosemary
    2 teas. grated lemon rind
    3 tab. fresh lemon juice
    2 tab. extra-virgin olive oil
    1 1/2 tab. dijon mustard
    1/8 teas. salt & pepper
    _____________________________1st 10 ingred.

    8 (1/2 inch thick) red onion slices
    4 (6 ounce skinned chicken breast havles
    4 ears corn w/husk
    cooking spray

    1. Combine first 10 ingred. in a small bowl; stir well. Arrange onion in a single layer in a shallow dish. Add chicken' pour herb mixture over onion & chicken. Cover & marinate in fridge 1 hour.

    2. Pull husks back from corn (do not remove). Remove silks. Pull husks back over corn, & tie tops w/heavy string; set aside.

    3. Prepare grill. Remove onions slices & chicken from dish, reserving marinade. Place chicken, bone sides up, on grill rack coated w/cooking spray; grill 50 min. or until chicken is done, turning & basting w/reserved marinade every 10 min. Moisten corn w/water; grill 10 min or until tender, turning corn after 5 min. Grill onion slices 6 min. or until tender, turning & basting after 3 min.

    I have fixed this many times and it is tasty

    partied too hard last night for your anniversary, huh?

    Seriously, when I feel like that I generally *don't* cook. I eat soup and crackers (as funnybone suggested), or just dry stuff like crackers and bread, and also usually have lots of tea and water.

    I always end up eating a box of mac and cheese! Probably how I ended up at WW!! How about some scrambled eggs with herbs? Something eggy?

    Awwww. Hope You Feel Better!

    If I were you, I would use Mochadelsol's honey mustard recipe. Marinate your chicken breast as long as you can, throw it on your Foreman Grill and eat it with a nice baked potato .

    Make sure you have a bit of ice cream for dessert.

    buffygirl ... yes I'm meant icky stomach but I meant to use dicky ... ... as funnybone suggested ... it a british term ...

    I did think about doing the lemon roasted one from WW as I know its got rave reviews ... I guess I could adapt it a little and throw in a little honey ... although I would like to try this one as recommended first ...

I've had my share of ice cream lately trust me ... btw ... baskin robbins has a fab light praline caramel ... don't know if you'll get it there but my god, you'd never figure it was yoghurt or light ... my new fav ... raspberry cheese louise is out the window ... btw ... i haven't made any homemade ice cream lately ... too busy! ;0(

    Squilts, it has to be a meat night! I did vegetarian night yesterday and my DH will feel all deprived if he doesn't get his meat fixin'

    Thanks for all the ideas guys! I guess it might help if I take some chicken boobs out to defrost eh? maybe I'll just let DH deal with dinner ...

    Thanks Wallycat ... that's sweet! I'm getting there.

    In the end I'm doing shrimp ... I didn't take any meat out so that was the quickest defrost option ... but I'll be doing one of these recipes tomorrow with chicken ...
