    S.O.S.: Recipe for feta chicken (chicken feta)?

    Help! I can't find a recipe that I set aside for dinner tonight. (One of the disadvantages of being a "clipper" is that you can lose those scraps of paper. )

    Anyway, can anyone help me with the recipe for Feta Chicken? Maybe it's called Chicken With Feta or something like that. It's a main dish and it's chicken with a feta cheese sauce. I think it's from a relatively recent issue. I've done a search but doing a search with "Chicken" and "feta" gets you half the board!

    Is this it? Sometimes it helps to limit your search to just titles.

    CHICKEN BREASTS WITH FETA CHEESE SAUCE

    Prep: 10 minutes
    Cook: 22 minutes

    Cooking spray
    6 (6-ounce) skinned chicken breast halves
    1 tablespoon butter or stick margarine
    4 teaspoons all-purpose flour
    1 (12-ounce) can evaporated fat-free milk
    1 tablespoon fresh or freeze-dried chives
    3/4 cup crumbled feta cheese

    1. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add chicken, and cook 9 minutes on each side until done; keep warm.

    2. Melt butter in a saucepan over medium heat; add flour. Cook 1 minute, stirring constantly with a whisk. Gradually add milk, stirring constantly; stir in chives. Reduce heat to medium-low; simmer 3 minutes or until thick, stirring occasionally. Add cheese; stir until cheese melts. Spoon over chicken.

    Yield: 6 servings (Serving size: 1 chicken breast half and 1/4 cup sauce.

    CALORIES: 243 (33 percent from fat); FAT 9 g (sat 5 g, mono 2.4g, poly 0.8 g); PROTEIN 30.2g; CARB 8.8 g; FIBER 0g; CHOL 87 mg; IRON 1.1mg; SODIUM 363mg; CALC 281 mg.

    Thanks schuh and aggie94-I've just decided what DH & I will be having for dinner tonight. Think I'll fix some steamed broccoli too.

    Thanks so much, Aggie. That's it. I couldn't remember the title at all.

    CJM, how was it? I didn't get a chance to get back ont he computer and ended up doing a new grilling recipe (balsamic chicken) that was mediocre.

    This one sounded good and easy (plus, my youngest, who's five, is wild about feta). I have feta in the fridge, chives in the garden, so maybe tomorrow...

    Yum - this looks so good! I, too, have all the ingredients on hand...woo hoo - could be a first.

    Well, I made it last night for dinner. It's not company stuff, but it was a good family dinner for us. Amazingly, my DH and kids all ate it -- this is not often accomplished in our household. (I did make the sauce, divided it into two parts, and added the chives to just one part -- this to avoid the "green" phobia by my youngest.) My only hangup was that the evaporated milk has a weird orangy/yellowy color that also defines the color of the sauce.
