I have a favorite muffin recipe. What is the rule of thumb for cooking temperature and time if I want to convert it to a loaf bread?
Generally quick breads bake at 350º for 50-60 minutes if you are baking in an 8-inch or 9-inch loaf pan. Mini-loaf pans would bake for less time.
You can usually bake muffins from loaf recipes. Just reduce the baking
time--keep the baking temperature the same as in the loaf recipe. If a loaf takes 30 minutes to bake, a muffin made from the
same recipe takes 20 minutes to bake.
Baking cakes into muffins are a bit trickier--the moist cake could suddenly turn
dry and flavorless when made into a muffin. Make sure you watch the baking time
closely---do not reduce the oven temperature, just reduce the baking time.
