    Psycho Chicken - How many LB'S?

    I'm having my sister and her family over for dinner tomorrow and want to make psycho chicken for them. There will be 3 small children (they don't eat very much) and four adults. What size of chicken should I buy? For some reason one that is 3 1/2 pounds doesn't seem big enough.

    With whole chickens it seems the question may be who likes light meat and who likes dark, and will there be enough of whatever kind people like. You can slice the breast and the thighs, and serve the legs and wings individually, but you are still just talking about 8 pieces of chicken to share.

    I usually have a 4+ pound chicken when I make this. DH likes the breast and I like the dark meat so we don't fight over who gets what, but I have been known to eat 2 pieces rather than 1. With 7 people, I would consider making 2 chickens rather than getting 1 larger chicken. That way there is plenty of choice, and enough to have extra if people want.

    My mother used to feed our family of 6 on a 3# chicken, but there was a strict hierarchy of who got which piece and there wasn't usually anything left over.

    I agree with sushibones. Try making two 3.5-4 pound chickens rather than 1 larger one.

    I finally made Psycho Chicken this week! I ran a search for an appropriate thread to put this on but so many popped up I decided to just latch on to yours.

    Psycho Chicken is very good - perfect roast chicken recipe. Your friends won't be disappointed.

    I hope this isn't sacreligious but I did all the hacking and seasoning and rubbing and then put the chicken in the freezer for a week until I was ready to make it. It worked, it was delicious.

    I also cut some Yukon Golds in half and put them cut side down right in the pan. Yum.
