    Exclamation Desperately ISO a specific no bake cookie

    I hope that one of you knows about this recipe. I have searched the site to the best of my ability, and have also run a number of online searches, including allrecipes.

    My mom used to make a great no bake cookie, and I have lost the recipe. It had chocolate, coconut, marshmallows, and (I think) oats in it. You mixed it all up and melted the marshmallows into the mixture and then dropped them onto cookie sheets and chilled them. But I don't know if I am remembering all of the ingredients, and I don't know any proportions.

    Anyone? I would love you forever!

    What you are describing sounds similar to a cookie my mother makes. Hers doesn't contain marshmallows but I don't see why you couldn't add them. I don't have the recipe but can get it (day after X-mas). From memory I know that it involves making a chocolate syrup of sorts and them adding the coconut/oatmeal to it before ploping Tablespoonfuls onto waxed paper and freezing.

    This one doesn't have marshmallows either but the rest sounds fairly close. I make these every Christmas because it's one of my son's favorite cookies.

    Chocolate Oatmeal Cookies

    1 stick butter
    2 cups sugar
    3 Tbsp. cocoa
    1/2 cup milk
    1/2 cup peanut butter
    2 1/2 cup quick oatmeal
    1 tsp. vanilla

    Melt butter and add sugar, cocoa and milk. Boil for exactly 2 minutes.

    Quickly add peanut butter, oatmeal and vanilla.

    Drop by spoonful on waxed paper. Cool and enjoy.

    Melman -- In the recipe you posted, should it be 3 Tbsp of cocoa instead of 3 Tbsp of sugar? You list sugar twice in the ingredients, and cocoa appears in the directions. They sound great, I've had no-bake cookies before but never made them myself. I may give these a try for the holidays this year. Thanks!

    mine is very close to Melman's, called No Bake Ice Box Cookies

    2cups sugar
    3T. Cocoa
    1/2c milk
    1/2c butter
    1/2c peanut butter
    1t. vanilla
    3c quick oats

    Mix first 4 ingred. & boil 1 min. remove from heat. Beat & andd vanilla. Add peanut butter & oats. Stir until well mixed. Drop by teasp. onto waxed paper store in fridge for 30 min. Remove and store in a tin or plastic container in ice box.

    Thanks Kari!!...that was a typo. I just corrected it. The 3 tablespoons is of cocoa. It really is an easy recipe. You just want to have everything measured and sitting next to the stove before you start stirring. As soon as the 2 minutes are finished, dump everything quickly into the pot, stir well, and put spoonfuls on waxed paper to cool.

    Thanks! Those cookies look great, but the ones I am looking for definitely did not have peanut butter in them.

    I really have other things to do, but I searched for no bake cookies and found a lot of recipes. I scanned through some of them and found this one on the All Recipes site. If you leave out the pb, it sounds like it might be close to the one you are looking for.

    " Chocolate chips, oatmeal, peanut butter, marshmallows. No baking, just drop onto waxed paper, and place in refrigerator to set. "



    Ingredients
    1 cup semisweet chocolate chips
    1/3 cup butter
    16 large marshmallows
    1/3 cup creamy peanut butter
    1/2 teaspoon vanilla extract
    1 cup flaked coconut
    2 cups rolled oats

    Directions

    1 In the top half of a double boiler, melt chocolate chips, butter, and marshmallows over low heat. Stir until smooth, and remove from heat. Stir in the peanut butter, vanilla, coconut, and oats. Mix thoroughly. Drop by rounded spoonfuls onto waxed paper. Refrigerate for about 30 minutes, or until set.

    MWS, I must have looked right past that one on allrecipes because it had peanut butter. I think I will try it this weekend and omit the peanut butter and see if it replicates mom's cookies. THANK YOU!

    Shredded coconut

    Melt chocolate chips over low heat and add beaten eggs, butter, vanilla, and salt. Gradually add sugar, marshmallows and nuts to this mixture. Mix well. Chill until chocolate sets a bit. Drop by spoonfuls into shredded coconut. Roll in balls. (Or roll in waxed paper. Refrigerate and slice.) Keep refrigerated. May be used as candy.

    Did a bit moe searching and found this one that is from Quaker's Oatmeal (and may have been on the box...seems like my mom used to get most of her recipes from boxes ); it's been updated to give microwave directions but the recipe is from about 1968 and she may have left out the fruit.

    Quaker'S: Chewy Chocolate No-Bake
    Yield: 3dz

    Ingredients

    6 oz semisweet chocolate pieces
    1/3 c margarine or butter
    16 lg marshmallows
    1 ts vanilla
    2 c quaker oats uncooked; (quick
    - or old
    1 ; fashioned)
    1 c mixed fruit

    Instructions

    Mixed fruit may consist of any combination of raisins, diced dried
    mixed fruit, flaked coconut, miniature marshmallows or chopped nuts

    In large saucepan over low heat, melt chocolate pieces, margarine and
    marshmallows stirring until smooth. Remove from heat; cool slightly.
    Stir in remaining ingredients. Drop by rounded teaspoonfuls onto wax
    paper. Chill 2 to 3 hours. Let stand at room temperature about 15
    minutes before serving. Store in tightly covered container in
    refrigerator. MICROWAVE DIRECTIONS: Place chocolate pieces, margarine
    and marshmallows in large microwaveable bowl. Microwave on HIGH 1 to
    2 minutes or until mixture is melted and smooth, stirring every 20
    seconds. Proceed as recipe directs.

    Nutrition Information: 1 piece Calories 75, Calories From Fat 27,
    Total Fat 3g, Saturated Fat 1g, Cholesterol 0mg, Sodium 20mg, Total

    This is a recipe my Mom used to make. There are no marshmallows, but I am sure you could just throw them in.

    Chocolate Oatmeal Cookies

    1 stick Butter
    2 squares Unsweetened Chocolate
    ½ cup Milk
    2 cups Sugar
    1 teaspoon Vanilla
    1 cup Cocomut
    3 cups Quick Cooking Oatmeal

    Melt together the butter and chocolate in a heavy sauce pan over medium heat. Add milk and sugar to pan. Cook for five minutes. Remove from heat and add vanilla, coconut, and oatmeal. Stir until mixed. Drop on wax covered cookie sheet and refrigerate until firm.

    Sneezles, that may very well be the one!!! THANK YOU THANK YOU! I will have to go buy some marshmallows and I will try it out.

    Thank you to everyone that has helped me with this. These recipes are all very similar, but I'm guessing the second one Sneezles posted is the closest. Especially if it may have come from the back of the bax. My mom, too, made a lot of back of the box recipes.

    I hope you find the recipe. I had no idea that there was such a thing as no bake cookies until last night. Some of the recipes I found look really good and I want to try the one Szeezles posted too. One of my favorite baked cookies is a chocolate chip/coconut/oatmeal recipe, so if I can skip the baking step, it would be so much easier. Let us know how the recipe testing goes.

    in my opinion, no bake cookies are more like candies than they are like cookies. they really don't seem like cookies at all to me and I have never understood why they are called that.

    Sneezles, THANK YOU! As promised, I now love you and will do so forever. I made the Quaker Oatmeal ones tonight and that must have been mom's recipe. I used just coconut for the dried fruit because that is what mom used. These are not knock-you-over delicious cookies, but they are quite yummy. I wanted the recipe more to remember mom than anything else. But she made them every christmas along with her Oatmeal Coconut Chocolate Chip Cookies, and so I will too.

    Valerie, I agree that no-bake cookies are not like regular cookies. They seem to be somewhere in between cookies and candies.

    I don't know if this is it, but here is a recipe my mom used to let us make when we were kids and wanted to play w/ her in the kitchen:

    Sand Roses:
    3 oz. vegetable shortening
    6 oz dark chocolate chips
    6 oz powdered sugar
    12.5 oz Corn Flakes

    In a large saucepan, melt vegetable shortening and the chocolate. Let cool 3 min and add the powdered sugar and Corn Flakes.
    Form little mounds on a baking sheet and let set in fridge, covered w/ plastic wrap.
    Keeps well and for a long time.

    The measurements are in oz. because I converted the recipe from my mom's recipe card written in French...I moved here carrying the recipe w/ me, that has got to be love!! It works well though.

    I agree -- except for the homemade "Kit Kat" bars. I am eating one right now and it seems more like a cookie than a candy.

    Here is the recipe from my mother:

    Unbaked Chocolate Oatmeal Cookies
    Carol Reiss-West Side Church of th Nazarene Wommen's Cookbook

    2 cups sugar
    1/2 cup milk
    1 stick oleo (Heh!)
    1/2 cup cocoa
    3 cups uncooked quick oats
    1 tsp vanilla

    Boil sugar, milk, oleo, and cocoa for 1 1/2 minutes
    Remove from heat and stir in vanilla and oats. Plop by spoonfuls onto waxed paper and cool in the fridge.


    My mother added coconut and paenutbutter to this recipe. (She adds peanutbutter to every sweet recipe- my bigest pet peeve.)
