My sister says that her roasting pan has a lid and she loves it. Mine, however, does not. Do you think a lid makes much difference?
Thank you!

Mine does not have a lid, nor have I ever really needed one - If things start to brown too fast, you can always put a little tin foil over them to slow down the browning.
One year my older sister, who is NOT a cook by any means, decided she was going to have Thanksgiving at her house. She borrowed my mom's roasting pan, which not only has a lid, but vents in the lid that you open and close for "browning control", I guess. (My mom has always used this roasting pan, and I'm 45 years old, so it's gotta be a least 50 years old). My sister closed all the vents, and we had a steamed, white turkey that year. LOL - it was certainly moist!
That's a great story! You made me laugh. Tinfoil work for me!
Thanks!
