    Lost GREAT Meat Loaf recipe

    My print out of a Cooking Light Meat Loaf recipe is so torn,tattered and stained I can't read it anymore. It's called Aunt or Grandma someone's? Meat Loaf,I Think. It calls for Grd. Sirloin, 1/2(?) lb.Grd. Pork,finely chopped carrots and onions and more. I can't read most amounts or even a lot of the ingredients.That recipe convinced my son that "diet" food as he calls it,really is good. Now it's the ONLY meat Loaf he'll eat! Can anyone help me?

    Can you tell us which issue it is from or around what year? I'm sure I have it, but it would help to know where to look (or approximately, anyway!).

    from another thread, I see that Peggy says Mama's Meat Loaf is on page 49 of the 1997 annual.

    Lost GREAT Meat Loaf Recipe

    OOPS,thanks for the nudge Grace,I should have asked stating the date too. All I can say is it's from before 9 or 10/00 since that's when my subscription started. I printed it from the web site they had then. After they changed or up graded their server and the site a while back,I found it again and put it my online cookbook. They recently reworked some of the site,and for some reason my cookbook has lost all but 1 saved recipe! Is it my imagination or are there fewer recipes,and harder to them too? Today when I typed in Meat Loaf in the recipe finder there were several that were,nt listed that I found in a link from an older online article I ran across. I appreciate the reply's! It's so encouraging to see a newbie isn't ignored.

    We never ignore newbies here! It's a great place. You'll soon be addicted like the rest of us....

    Anyhow - I'm still looking, but I started with the Mama's Meatloaf that Val mentioned above - it's in the March 96 issue, but I don't think it's the recipe you want - it doesn't call for ground pork or carrots. I'll keep searching.....

    Barbecued Meat Loaf

    SOURCE: Cooking Light YEAR: Jan/Feb 2000 PAGE: 106

    INGREDIENTS FOR 8 SERVINGS:
    1 cup ketchup
    1 tablespoon Worcestershire sauce
    2 teaspoons chili powder
    1 tablespoon red wine vinegar
    1 (1/2-ounce) slice white bread
    1/2 cup 1% low-fat milk
    1 cup minced fresh onion
    1/2 cup (2 ounces) grated fresh Parmesan cheese
    1/2 cup finely diced carrot
    1/4 cup minced fresh parsley
    1 teaspoon chopped fresh or 1/4 teaspoon dried rubbed sage
    1/2 teaspoon black pepper
    2 garlic cloves, minced
    1-1/2 pounds ground sirloin
    1/2 pound lean ground pork
    1 large egg, lightly beaten
    Cooking spray

    INSTRUCTIONS:
    1. Preheat oven to 350 degrees.

    2. Combine first 4 ingredients in a small bowl.

    3. Place bread in a food processor; process until finely ground. Combine bread and milk in a large bowl. Add 1/2 cup ketchup mixture, onion, and the next 9 ingredients (onion through egg); stir until well-blended. Place beef mixture in an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350 degrees for 1 hour. Brush remaining ketchup mixture over top. Bake at 350 degrees for 15 minutes. Let stand 10 minutes. Remove meat loaf from pan. Cut into 8 slices.
    Yield: 8 servings (serving size: 1 slice).

    CALORIES 257 (33% from fat); FAT 9.5g (sat 3.8g, mono 3.7g, poly 0.7g); PROTEIN 28.9g; CARB 13.8g; FIBER 1.4g; CHOL 102mg; IRON 3.3mg; SODIUM 591mg; CALC 135mg

    Grace,Thanks for the recipe. It isn't the one I'm looking for,but it gives me a jumping off point. I promised him meatloaf tonight,so I'll punt using the basics from the recipe you posted. I'll let you how I made out.

    Grace,the Meat Loaf was a hit,Thanks so much. Though after reading the other Meat Loaf threads I see the Barbecued Meat Loaf recipe has many praises. So the next Meat Loaf dinner,which won't too long off in this bitter cold NE winter,I'll follow it to the letter.

    Thanks to everyone for your kind and generous help! Who knew Meat Loaf could be such a dilemna?
