    Thumbs up REV: Apple Adobo Pork and Couscous CL 4/03

    Very tasty! I was actually not expecting much from this one and was pleasantly surprised I would give it a solid 8/8.5 with ease and speed factoring in there as well. I used lean generation pork chops and added a bit of cornstarch at the end to thicken up the "sauce". I also added mushrooms to the pork mixture. I loved how the heat from the adobo balanced out the sweetness of the couscous. And DH who is not usually a big couscous fan certainly liked it with the apples. All in all, I thought it was a well received weeknight meal!

    I tried this one last week. Have never been the first one to review, so I waited until someone else tried it first. I know....I'm a big chicken.! We enjoyed this very much. Made the recipe as is..except I added a little extra apple juice to the couscous. Reason being that I thought the couscous was kind of dry. I haven't cooked with Granny Smith apples before, are they supposed to be sweet?. They didn't seem to impart a very sweet apple taste. More like tart and mellow. Perhaps I should have added more. Very good overall though, and very easy to make. LaurieC

    sorry...i guess my post was confusing...I like tart and sweet so sometimes I confuse the two Grannies are tart, but I personally think they become sweet when they are cooked. The couscous to me tasted sweet with the juice and the cooked apple.

    Maybe I just didn't get a very ripe Granny Smith Apple!! I assume that can happen as it does with all fruit. Right? LaurieC

    We had this for dinner tonight and it was easy and very good. I agree with JeAnne's description - the heat from the chile was a good balance for the sweeter couscous. In response to the granny smith apple question, they are tart when raw but I agree that they were very mellow and almost sweet after being cooked. The cooking must make the flavor change.

    I made this last night. This was my first time using Chipotle peppers, and I really like it. I liked the flavor combo of apples and peppers in the sauce. I pureed the sauce with my immersion blender after cooking, because I didn't like the way it looked. This made a yummy looking orange sauce to pour over the pork. Also, this was really fast to make.

    This is on the menu for tonight's dinner, but I have a question. What substitute can I make for the couscous? Niether DH or I are wild about the stuff. We had bulgar last night, so that's out. Basmati rice perhaps? Jasmine? Plain old white on rice? Or would some sort of potato dish work with the sauce?
