Another recipe out of the Superfast Suppers book. I have mixed feelings about this. It's basic a broiled steak with a shallot sauce. The steak came out fine - nothing spectacular, but fine. The sauce I wasn't impressed with. It basically looked and tasted like french onion soup (it was just shallots, beef broth, and mustard added at the end.) If I were to make it again I'd use less broth, add a little wine, and add a cornstarch slurry at the end to thicken it up. It went fine with the steak but again was nothing special. However, it was quick and easy and made DH happy. I suspect the cuts of beef I had weren't the highest quality so I might try again with better beef.
I did not try the accompanying veg recipe - orange herbed asparagus. Instead I wanted to use what I had so I made spaghetti squash, shredded zucchini, carrots, and tomatoes with Italian seasoning and fresh thyme. That and a fresh baguette to soak up all the sauces. That part was good!
