    Update:Slow-Cooker Meat Loaf with Shiitake Mushrooms

    I knew I wanted to make this but was worried about being away from home more than 5 hours, I couldn't leave the crockpot off for 4 hours, then have it turn on with a timer. So, when I got home last night I prepared this recipe, then put it in the oven at 350 for an hour. It was delicious!! It was still moist. I don't know if it may be better in the crockpot but in the oven it was excellent. Our neighbor stopped in and after a few minutes he asked what we were having for dinner, could he stay?

    Slow-Cooker Meat Loaf with Shiitake Mushrooms

    2 (1-oz) slices whole wheat bread
    3/4 pound ground round
    3/4 pound ground turkey
    1 1/2 cups sliced shiitake mushrooms
    1/2 cup grated fresh onion
    1 teaspoon dried Italian seasoning
    3/4 teaspoon salt
    2 large eggs, lightly beaten
    1 garlic clove, minced
    2 tablespoons ketchup
    1 1/2 teaspoons Dijon mustard
    1/8 teaspoon ground red pepper

    1. Place bread in a food processor and pulse 10 times or until crumbs measure 1 1/3 cups. Combine crumbs, beef and next 7 ingredinets (beef through garlic) in a large bowl and shape meat mixture into a 9x6-inch loaf. Place loaf in an electric slow cooker.

    2. Combine ketchup, mustard, and pepper in a small bowl stirring with a fork. Spread ketchup mixture evenly over top of loaf. Cover with lid, cook on Low for 5 hours. Yield: 6 servings (serving size: 4 ounces).

    Thanks for the review, Susan! I've been wanting to make this one, too. I think I will bake it in the oven as you did; I like my meatloaf to be browned on the top and sides.

    We had leftovers tonight and really enjoyed the flavor of the shiitake mushrooms. Also, we like our meatloaf browned, this is a make again for us! Let us know how it works for you!
