    I didn't make (or note) very many new recipes this month. We were gone 2 out of 3 weekends, made sausage one weekend.....

    Miso Walnut Sauce (Enchanted Broccoli Forest)
    ---This was so excellent. Next time I might make it with apple juice, because the mirin was a little alcohol-y. Served it over plain pasta and steamed broccoli rabe...YUM!
    Steamed Salmon with Black Bean Sauce (CL 1/01)
    ---I can't say enough about this dish. See the reviews here
    Egg Rolls (me)
    ---the surpirse hit of Thanksgiving. BF thought I was crazy for serving egg rolls as Thanksgiving appetizers, but I needed something that was easy to prepare and didn't require using the oven (because the turkey was in there!). I wanted to make spring rolls but could only find egg roll wrappers, so I improvised: I filled the wrappers with thinly sliced savoy cabbage, carrots, scallions, rice noodles, sauteed onions and garlic, and soy-sauce-marinated tofu, sealed the edges with egg wash, and fried in cooking spray. Virtually fat-free, and they all disappeared!
    Cornbread Stuffing with Sausage (CI's Complete Book of Poultry)
    ---found the recipe on the BB, and it was oh so good! My new staple at the Thanksgiving table. I added dried cranberries.

    Sweet and Sour Crockpot Meatballs (CL BB)
    --my other oven-free Thanksgiving appetizer, would have been the hit of the appetizers if it hadn't be so totally overshadowed by the egg rolls (can you tell I'm proud? ). This was the oft-mentioned chili-sauce and cranberry jelly recipe, and it was very good. Nothing fancy, but perfect finger food.

    Triple Hazelnut Cheesecake

    1/2 cup chopped hazelnuts -- toasted and divided
    1 tablespoon light brown sugar
    15 chocolate wafers
    1 tablespoon vegetable oil
    Cooking spray
    1 tablespoon instant coffee granules
    1 tablespoon hot water
    1 container fat-free cottage cheese -- (16-ounce)
    1 block fat-free cream cheese -- (8-ounce)
    3/4 cup unsweetened cocoa
    3/4 cup packed brown sugar
    1/2 cup granulated sugar
    1/2 cup hazelnut-chocolate spread (such as Nutella)

    2 tablespoons cornstarch
    2 tablespoons Frangelico (hazelnut-flavored liqueur)

    1/4 teaspoon salt
    3 large eggs -- lightly beaten



    1. Preheat oven to 325 degrees.

    2. Place 1/4 cup hazelnuts, 1 tablespoon brown sugar, and chocolate wafers in a food processor; process until finely ground. Add oil; process until crumbs are moist. Firmly press crumb mixture into bottom of a 9-inch springform pan coated with cooking spray. Wrap outside of pan with a double layer of aluminum foil.

    3. Combine instant coffee granules and 1 tablespoon hot water in a small bowl. Place cheeses in food processor; process until smooth. Add coffee mixture, cocoa, and next 6 ingredients (cocoa through salt); process until well blended. Add eggs; process until smooth. Pour mixture into pan.

    4. Place pan in a large baking pan; add hot water to baking pan to a depth of 1 inch. Bake at 325 degrees for 1 hour or until cheesecake center barely moves when pan is touched.

    5. Remove cheesecake from oven; run a knife around outside edge. Cool to room temperature. Cover and chill at least 8 hours. Remove cheesecake from springform pan; sprinkle with 1/4 cup hazelnuts.

    Here are the Beef Triangles:

    Beef Triangles with Chutney Sauce
    1/2 cup plain low-fat yogurt
    1/2 cup mango chutney
    1 pound ground chuck
    1/2 cup chopped onion
    1/3 cup dried currants
    1/2 teaspoon salt
    1/2 teaspoon ground cumin
    1/4 teaspoon ground nutmeg
    1/4 teaspoon ground cinnamon

    1/8 teaspoon black pepper
    1/2 cup water
    1 tablespoon cornstarch
    15 sheets frozen phyllo dough, thawed
    Butter-flavored vegetable cooking spray

    Combine yogurt and mango chutney in a bowl; stir well, and set chutney sauce aside.

    Cook meat and onion in a large nonstick skillet over medium heat until browned, stirring to crumble. Drain meat mixture in a colander; wipe drippings from skillet with a paper towel.

    Return meat mixture to skillet. Add currants and next 6 ingredients (currants through black pepper); stir well. Combine water and cornstarch; stir well, and add to the meat mixture. Cook over medium heat 2 minutes, stirring constantly. Remove from heat; set aside.

    Working with 1 phyllo sheet at a time, cut each sheet lengthwise into 4 (3 1/2-inch-wide) strips; lightly coat strips with cooking spray (cover remaining phyllo dough to keep it from drying out). Stack 2 strips, and spoon about 1 tablespoon meat mixture onto one end of each stack. Fold the left bottom corner over mixture, forming a triangle; keep folding back and forth into a triangle to end of strip.

    Place triangles, seam sides down, on a baking sheet; lightly coat with cooking spray. Bake at 400° for 12 minutes or until golden. Serve warm with chutney sauce.

    Yield: 30 appetizers (serving size: 1 triangle and 1 1/2 teaspoons sauce)

    Any chance I could get the Sausage Stew with Polenta recipe?

    I tried a good number of new recipes in November, but I don't keep track unless they are absolute keepers. One standout success for the month was Apple Butter from Art Smith's Back to the Table. First time I've ever made it and wow is it yummy. Maybe I'll try keeping track this month!

    Here you go Erin. I used all-white-meat Chicken Sausage that I found at the grocery store (160 cal/4 oz). note that the nutrition info excludes the 1/4 cup olive oil. There's tons of sausage in each serving. The sausage mix would be great over pasta or rice as well as the polenta. I wish I had made more - it was so tasty!

    Polenta with Sausage Stew

    Amount Measure Ingredient -- Preparation Method

    1/4 cup olive oil -- I left out and used spray.
    2 pounds chicken jalapeno sausage -- or any kind you like, sliced
    1 large red onion -- skin removed and cut in 1/2 and cut into slices
    3 bay leaves
    2 cloves garlic -- skins removed, and roughly chopped
    1/2 cup dry white wine
    2 cups crushed tomatoes -- in tomato puree
    Coarse salt
    Freshly ground pepper
    Polenta:
    1 teaspoon coarse salt
    1 cup yellow cornmeal
    4 cups water

    Heat a large skillet over medium heat. Add 1 tablespoon of the olive oil. Add the sausages and cook, piercing the sausages with a fork to release the fat. Cook until golden brown, about 8 to 10 minutes. Carefully drain off the excess fat.

    Add to the cooked sausages the remaining olive oil, onion, and bay leaves. Cook over medium heat until the onions are soft and translucent, 3 to 5 minutes. Add the garlic and cook until fragrant, 30 to 45 seconds. Add the white wine and continue cooking until reduced, about 2 more minutes. Add the tomatoes, cover, and cook, stirring often, until thick, about 30 minutes. Make polenta in the meantime.

    Season with salt and pepper. Add 1 to 2 tablespoons of water if the sauce starts to stick. Serve with polenta.

    Polenta:
    Line a large shallow dish, such as a pie plate, with a tea towel. Set aside.

    In a medium pot place 4 cups of water and salt. In a slow steady stream, add the cornmeal, whisking until incorporated. Cook over medium heat, stirring constantly. Cook until the polenta is thick and pulls away from the sides of the pan, about 20 to 25 minutes.

    Pour the polenta onto the towel-lined dish.

    Caramelized Onion Chicken
    From Cooking Light


    Sautéed green beans make a great side dish for this sweet, spicy chicken.

    1 pound chicken breast tenders
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1 teaspoon olive oil
    1/2 cup sliced onion
    1/2 cup seedless raspberry jam
    1 tablespoon red wine vinegar
    1 tablespoon low-sodium soy sauce
    1 teaspoon bottled minced ginger
    1/2 teaspoon dried rosemary

    Sprinkle chicken with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add onion, and sauté 2 minutes. Add chicken to pan; sauté 8 minutes or until chicken is done. Remove onion and chicken from pan.
    Add jam and remaining ingredients to pan; cook 2 minutes, stirring constantly with a whisk. Return chicken mixture to pan; cook 4 minutes, stirring occasionally.

    Yield: 4 servings (serving size: 3 ounces chicken and 1 tablespoon sauce)

    Sun-Dried Tomato Dressing

    1/4 cup plus 2 TBS water
    3 TBS white wine vinegar
    3 TBS extra-virgin olive oil
    1 TBS chopped sun-dried tomatoes
    1 TB sugar or honey (I used sugar)
    2 tsp crushed garlic
    1/2 tsp dried oregano
    1/4 tsp dried thyme
    1/2 tsp salt (I don't think I used that much)
    1/4 tsp ground black pepper

    1) Combine all ingredients in a blender or food processor until smooth.

    2) Cover and chill for at least two hours before serving.

    Yield: 7/8 cup
    Serving size: 1 TBS

    Christine, I think this is from the Nov. '98 issue...I have it cut out and in a binder. It was a reader recipe, it is so easy and very good! Sometimes I change the beans around based on what I have. And sometimes we throw in corn.

    Vegetarian Chili

    I've made this chili so often I don't even use the recipe anymore. It used to call for ground turkey, but I left the meat out one time, and my sister and my parents didn't seem to mind. Even people who eat meat like it this way.

    Cooking spray
    2 cups chopped red bell pepper
    3/4 chopped green bell pepper
    1 garlic clove, minced
    1 tablespoon chili powder
    1 teaspoon dried Italian seasoning
    1 (16oz) can Great Northern beans, rinsed and drained
    1 (15oz) can tomato sauce
    1 (15oz) can kidney beans, rinsed and drained
    1 (15oz) can black beans, rinsed and drained
    1 (14.5oz) can no-salt-added diced tomatoes, undrained
    5 teaspoons grated Parmesan cheese

    Place a Dutch oven coated with cooking spray over medium-high heat until hot. Add onion and peppers, and saute 10 minutes or until tender. Add garlic; saute 30 seconds. Add chili powder and next 6 ingredients (chili powder through tomatoes); bring to a boil. Cover, reduce heat, and simmer 10 minutes or until thoroughly heated. Ladle into soup bowls; sprinkle with cheese. Yield: 5 servings (serving size: 1 1/2 cups chili and 1 teaspoon cheese).

    I did a lot of cooking this month, but didn't try that many new recipes. Here's the rundown.

    Great! Will Make Again
    Not Yo Mama's Banana Pudding -- FoodTV.com (Paula Dean). This was an easy, very tasty dessert. The Chessmen make all the difference.
    Red Roasted Chicken Weight Watchers TOT and BB. Excellent recipe! Added a lot of flavor to roast chicken.
    Sesame Flank Steak -- BB Best flank steak marinade yet. Recipe is buried on the bb somewhere.
    Chocolate-Topped PB Mousse Cake -- October BA/BB. Decadent. Gets lots of attention at parties.
    Kentucky Bourbon Fruitcake Cookies -- All American Cookie Book, Nancy Baggett. Very yummy! Just don't double the candied cherries like I did -- makes them a bit too sweet.
    Nabisco Famous Wafer Cake --Back of the Box or here Wow! This was good! Even with Fat Free Cool Whip, this easy dessert was much better than it sounded. I'm going to try making it again with various flavors of whipped cream. Another good thing about this recipe is you can make each cake as large or as small as you'd like. For instance, you can make a single serving "cake" with 5 wafers and a 1/2 cup of so of Cool Whip. I may try this with French Vanilla flavor.
    Baked Garlic Cheese Grits -- CL May 2003. Didn't know I liked grits so much!

    Good, But Probably Won't Make Again
    Pork Loin With Corn Bread Stuffing -- October CL. Not bad, not great. I liked the idea of this, but the sum of it's parts was just not that great tasting.
    Moomie's Chocolate Chip Cookies -- Good, but too many other recipes to try.

    Horrible. Yuck
    Nothing for November -- Didn't take too many risks
