    delicious soup

    hi, im new to the boards, starting one that is, I love to read them and get such great ideas from everyone. Anyway, i made curried lentil soup last nite and it was delicious and made the house smell great, so i thought i would share. i half made it up, half took it from other recipes. here it is in case anyone needs warming up like i did. ps DB loved it!!!
    1 cup lentils
    4.5 cups vegetable broth or chicken broth. ( i used a little of each to finish them off.)can use more if you want.
    carrots
    diced green apple
    butternut squash
    onions
    2 bayleaves
    tablespoon plus curry powder
    tablespoon plus red curry paste
    1 tablespoon olive oil
    salt pepper to taste
    *since i made it up, i used the amounts of carrots, squash that i liked

    heat olive oil in soup pot, add carrots, squash, onion, apple, curry powder, curry paste. let cook for about 5 minutes. add broth, lentils, bayleaves, salt, pepper. bring to boil, let simmer 15 minutes or so. i then added more curry as thats what i love. it was so delicious. i dont have nutritional info. yet but i just got Mastercook and i think that is one of the functions. thanks.

    We like lentil soup at our house, too! I don't think I've ever seen curry paste before. Is it in the spice section, or do you find it in a specialty store?

    hi, thanks for your welcome. I bought the red curry paste in the asian grocery store but i think you can find it in the aisle of thai food items of a major grocery store. i use it as a starter for my curries and my peanut sauce. it comes in a jar and is a bit spicy. you can add it (tablespoon should do it) at the end of soups too. but i bet you can make this soup without it too.
