    Post a crock link

    When I was doing an earlier search, someone had posted a link to crock recipes. It didn't work and I can't remember what the link was to search for it. I need stuff that I can throw together either in crock or other on Mondays and Wednesdays. I've taken up pilates and the only class I could get was 5:30...and I don't like to eat late. I found one crock recipe and I was thinking of trying that beef-butternut chili in the crock...wonder if that would work.

    ...when I saw the topic, I automatically assumed "a crock link" was a comment on that Nestle web site which is now being censored...

    Gail, When I saw the words "crock link", I thought of the Nestle one as well. Thanks for letting us know that the link is being censored.

    Back to crockpots, I don't use mine very much, but the 2001 Sunset Magazine annual has some interesting recipes like drunken chicken with chardonnay sauce and lamb shanks with artichoke caponata.

    The other day, I made their pot roast w/merlot sauce and horseradish smashed potatoes, it was out of this world. I will try to post it soon as I know that a lot of you love using crockpots and this dish is also good for company!

    I love crockpot receipes. It makes dinner sooo much easier when I get home from work. But because I began gaining weight with all of those high fat receipes I am now cooking light and unable to find crockpot receipes low in fat. If you have any please share!!

    Southwestern Chicken (Serves 5-6 3-4 hours on H or 7-8 on L

    1 can (15 oz) whole kernel corn, drained (do not put the fractions, too
    lazy!)
    1 can (15 oz) black beans rinsed and drained
    1 jar of (16 oz) chunky salsa, divided
    4 to 6 chicken breasts
    1 C (4 oz) shredded cheddar cheese.

    Combine the corn, black beans and 1/2 C of salsa in a slow cooker.
    Top with chicken and pour remaining salsa over chicken. Cover.
    Sprinkle with cheese at end of cooking cycle and cover until melted,
    about 5 minutes.

    Hi,

    Here is the pot roast recipe as promised:

    Merlot Pot Roast with Horseradish Smashed Potatoes

    Prep/cook time 8/12 to 9 1/2 hrs on low, 5 1/2 to 6 1/2 hrs on high
    notes: prepare the smashed potatoes as soon as the beef is tender; the meat can continue to cook until they are ready. Makes 6 to 8 servings.

    1 tied fat trimmed boned beef chck roast (3-31/2 lb) fresh ground pepper
    1 tablespoon butter or olive oil
    3 carrots (about 1/4 lb. each ) rinsed and peeled
    1 onion (1/2 lb), peeled and chopped
    2/3 cup chopped celery
    3 cloves garlic, minced or pressed
    1/2 teaspoon dried thyme
    1/4 teaspoon black peppercorns
    1 dried bay leaf
    1 cup Merlot or other dry wine
    1/3 cup canned tomato paste
    1 1/2 tablespoons cornstarch
    Horseradish smashed potatoes
    (recipe follows)
    1 tablespoon minced parsley
    1 to 2 cups watercress sprigs, rinsed and crisped (optional)
    salt

    Rince beef, pat dry, and sprinkle generously all over with fresh ground pepper. Melt butter in a 10-12 inch nonstickfrying pan over high heat. When hot, add beef and brown wekk on all sides, 6 to 8 minutes total.

    Meanwhile, cut carrots into sticks about 3/8 inch thick and 2 inches long. In a 4 1/2 quart or larger electric slow cooker, combine carrots, onion, celery,garlic, thyme, peppercorns, and bay leaf. Set beef on vegetables: add drippings. In a small bowl, mix wine and tomato paste; pour over meat and vegetables.

    Cover and cook until beef is very tender when pierced, 8 to 9 hours on low, 5 to 6 hours on high. If possible, turn meat over halfway through cooking.

    With 2 slotted spoons, transfer meat to a platter; keep warm. Skim and discard any fat from cooking liquid. Turn cooker to high. In a small bowl, blend cornstarch with a 1 1/2 tablespoons water; pour into cooker and stir often until sauce is bubbling, 10-15 minutes.

    With a slotted spoon, lift vegetables from cooker and arrange beside meat. Spoon horsradish smashed potatoes onto platter; sprinkle with parsley. Garnish Platter with watercress. Spoon sauce over meat. Slice meat and serve with vegetables, potatoes, and sauce, adding salt to taste.

    Per serving without potatoes: 314 calories, 40%(126 cal.) from fal" 34 g protein; 14 g fat (5.6 g sat.) 11 g carb. (2.3 g fiber); 256 mg sodium; 115 mg chol.

    Horseradish smashed potatoes

    Scrub and peel 13 to 3 1/2 lbs. russett potatoes; cut into 1 1/2 inch chunkd. Put into a 4-5 quart pan with 2 1/2 quarts water. Bring to a boil over high heat; reduce heat, cover, and simmer until potatoes mash easily when pressed, 20=25 minutes.

    When potatoes are done, heat 1 to 1 1/2 cups half and half or fat skimmed chicken broth with 2 T. butter or margerine in a microwave safe container in a microwave oven at fullpower just until steaming 1 to 3 minutes. Or warm in a 1 to 1 1/2 quart pan over medium heat.

    While creqm heats, drain potatoes and mash in pan with a mixer or potato masher until almost smooth. Add cream, a portion at a time, and mix until potatoes have the consistency desired. Stir in salt, pepper, and 1 to 2 tablespoons prepared horseradish to taste. Mound beside Merlot pot roast or scrape into a bowl. makes6 to 7 cups 6 to 8 servings.
    per serving: 189 calories, 31% (59cal) from fat; 3.9g protein, 6.6 g. fat (3.9 sat)) 29 g carbo (2.6 g fiber) 55 mg sodium, 19 mg chol.

    This is my favorite crockpot recipe...and it came from CL!

    Mama's Chicken Stew

    1 pound skinned, boned chicken breasts, cut into bite-size pieces
    1 pound skinned, boned chicken thighs, cut into bite-size pieces
    2 cups water
    1 cup frozen small whole onions
    1 cup (1/2-inch) sliced celery
    1 cup thinly sliced carrot
    1 teaspoon paprika
    1/2 teaspoon salt
    1/2 teaspoon rubbed sage
    1/2 teaspoon dried thyme
    1/2 teaspoon black pepper
    1 (14 1/4-ounce) can fat-free chicken broth
    2 cups halved mushrooms
    1 (6-ounce) can tomato paste
    1/4 cup water
    3 tablespoons cornstarch
    2 cups frozen green peas

    Combine first 14 ingredients in a large electric slow cooker. Cover
    with lid, and cook on high-heat setting for 4 hours or until carrot is
    tender. Combine water and cornstarch in a small bowl, stirring with a
    whisk until blended. Add cornstarch mixture and peas to slow
    cooker; stir well. Cover and cook on high-heat setting an additional
    30 minutes. Yield: 8 servings (serving size: 1-1/2 cups).

    NUTRITIONAL INFORMATION:
    CALORIES 257 (12% from fat); PROTEIN 30.8g; FAT 3.5g (sat 0.8g, mono

    Hi all! I'm new to the boards and am having a blast just browsing thru and checking out all the interesting threads - I've been a CL reader for a couple of years now and it's really cool to find a community of like minds.

    Anyway, I share luv2cooks' desire for crockpot recipes, I commute 2hrs a day so having dinner ready when I get home is almost a necessity to retain my sanity. One of my favorite recipes is one I've made twice for company get togethers, and it always gets rave reviews. Last time the aroma even coaxed a staunch vegetarian into trying it, and he surprised himself by loving it! It's called Kahlua Pork, and is a variation on a Hawaiaan dish that includes banana. I'm not too fond of bananas in main dishes so I exclude it, but it does lend a mild flavor if you include it. The best part is that it's embarrassingly easy to prepare:

    1 Pork Butt roast
    Soy Sauce ( I use low sodium)
    Smoke Flavoring

    Sprinkle a teaspoon of soy sauce in the bottom of the crockpot. Sprinkle aprox 1-2TB of soy sauce over the roast, covering all surfaces. Add 1 teaspoon of smoke flavoring to the top of the roast, letting it run down the sides. Put a lid on and cook 4-6 hours. Skim fat from surface when done, remove the meat and let cool. Shred the pork and serve w/reserved juices.

    The banana variation includes adding a halved banana to the pot, then removing before serving. I serve this with Basmati rice & it's out of this world!

    Hi!

    I'm new here - I've been reading CL for almost a year and love it!

    I use my crockpot regularly and one of my family's favourite's is Three-Pepper Steak. It's easy and very yummy! I usually just serve it with rice.

    Three-Pepper Steak

    1 (1 to 1 1/4 lb.) beef flank steak
    1 yellow bell pepper
    1 green bell pepper
    1/4 tsp salt
    1/2 tsp red pepper flakes
    3 green onions, including some tops, chopped
    2 tbsp soy sauce
    2 medium tomatoes, chopped

    Trim all visible fat from steak. Place steak in a 3 1/2 quart slow cooker. Romove stems and seeds from yellow and green peppers; cut into strips. Arrange bell peppers on steak. Sprinkle with salt. Top with red pepper flakes, green onions, soy sauce and tomatoes. Cover and cook on LOW 6-7 hours or until steak is tender.

    (Cal 163, Carb 5 gm, Prot 21 gm, Total fat 7 gm, Sat fat 3 gm, Cal from fat 63, Chol 45 mg, Sodium 590)

    Lisa W - don't you find after all that time that the peppers are mush? I don't like that but sometimes you can't be home to cook the darn things later. that's one of the reasons I'm not all too fond of crocking but, hey, it can bail you out when you have a busy day...

    luv2cook - I normally prefer my peppers with a bit of crunch, but mixed with the tomotoes and onions it ends up making a great topping for the rice.

    Wendy - two big, big thumbs up on the roast! Goodness, it melted in our mouths. I did as most of you suggest - nearly doubled the garlic, seasonings, etc. It was great, and I can't wait to do it again. Thank you so much!!!!!
