    Recipe to Share: Farfalle with Arugula, Sausage and Garlic

    This is from March Redbook 30-Minute Meals:


    Farfalle with Arugula, Sausage and Garlic

    4 Tbsp. extra virgin olive oil
    1 large onion, chopped
    4 garlic cloves, chopped
    8 oz. sweet Italian pork or turkey sausauge, casings removed, crumbled
    1/2 tsp. crushed red pepper flakes
    1 lb. arugula, trimmed, rinsed well
    1 lb. farfalle (bowtie) or other pasta such as orecchiette or rotelle
    1 tsp. salt
    1/2 C freshly grated parmesan cheese

    Heat 1 TB of oil in large skillet over med. heat. Add onion and cook until softened, about 3 minutes. Add garlic and stir until fragrant, about 1 minute. Add sausage and red pepper flakes and cook until meat is no longer pink, about 4 minutes. Add the arugula in several batches, stirring until each batch of arugula wilts before adding the next. Cover mixture, reduce heat to med-low and simmer until arugula is tender, about 5 minutes.

    Meanwhile cook pasta according to package directions. Drain, reserving 1/2 C of pasta cooking water. Return pasta to pot. Add arugula mixture, remaining 3 TB olive oil and salt, tossing to combine. Add parmesan cheese and toss again, adding enough of the reserved pasta water to moisten the pasta. Serve hot with additional cheese on the side if desired.

    6 servings. 480 cal., 18 g. fat, 19 g protein, 63 g carbs.

    Pammela,

    We had this for dinner last night and thought it was great! Thanks so much for posting. I used spicy chicken sausage and probably used a little bit more of it. Otherwise, followed the recipe as written. It went together very quickly and was quite comforting on such a cold night.
