I made this for dinner tonight. They're interesting, in a yummy way...not your average chicken finger. They taste sort of Indian. And I taste the orange a little more than I expected...not in a bad way, just more. The more of them I eat, the more I like them.
I omitted the sugar because I was using sweetened coconut, and it was fine. I used egg whites for dipping, although with the OJ marinade, you might be able to skip eggs altogether and the coating should stick. Also, I used regular garlic in the marinade but was too lazy to chop two more cloves, so I used 1/2 tsp garlic powder in the crumb coating. I sprayed the topes with cooking spray instead of drizzling with butter.
I served them with glazed carrots.
And it was fun to use Frosted Flakes in a dinner recipe.
Endurance comes from exhaustion. Keep running!
