    How long will Miso last?

    Ok...I have a little delima.

    I bought some light miso from our oriental shop and all they had at the time was 2.2 pounds. It was only $5.00 so I was not too worried about the size.

    I got it to try to recreate a ginger/miso dressing that we had in a resturant.

    Needless to say...I have about 2.1 pounds left!!

    Does anyone know how long Miso lasts in the refrigerator? All the instructions are in Japanese. The package is opened but double wrapped in a ziploc.

    I asked the same question of the guy at my local health food store - to quote him "It's fermented beans - it's already gone bad". My jar says it's good for life.
    It's embarrassed but it's lusting after a SUNY student with mousy-brown hair who is taking out the compost, making coffee in long underwear.

    Southern California says to save a place, I'll meet you there and it tried to pack up it's Miata, all it could fit was a prayer.

    LOL...well, I guess that does make sense...I never thought of it that way.

    I am glad to hear your jar says good for life. Hopefully I will use up two pounds of the stuff in my lifetime

    How DID you know? I made the Miso Glased Salmon tonight for dinner and it was DELICIOUS!!!! I also made a Miso Ginger dressing that was good but not quite the recipe I am looking for.

    The Miso-Wasabi Marinated Flank Steak sounds great. I love making sushi so I always have Wasabi on hand!

    She-Who-Breeds-Things-in-the-Fridge has thusfar been unsuccessful in her attempts to turn miso into a petri dish. Miso is one of the few things which has thusfar defied the the Ultimate Challenge: Life in the Dark Recesses of Gail's fridge.

    ...well, actually I tossed it the last time I did a major cleaning. Like Dorian Grey, it still looked young and fresh.

    LOL! Because that's why I have miso in my fridge. For the record, I like the Miso-Wasabi Flank Steak better than the salmon.
