I remember making Eggplant soup from Weight Watchers a couple of years ago. I think the eggplant was roasted but I'm not sure. I know the recipe had a parmesan rind in it. Does anyone have this recipe? It's really good! Thanks.

Sorry, I've checked all my WW books and the website but cannot find this recipe. Did find tons of eggplant soup recipes on a search but none I checked used parmesan.

do you remember when the recipe was posted? I saw a roasted eggplant soup but it didn't come up as a WW.

No, a neighbor, who has since moved, gave me the recipe a while ago and said it was Weight Watchers. So maybe 2-3 years? Not sure when she got it, though. Don't you hate it when you lose a recipe!!
