    Rev: Spicy Turkey Burgers BA 8/04

    We really enjoyed these--always looking for another turkey burger. The recipe called for 3 tbsp of oil in the mixture and I only put in two--would even cut that out I think. They were very moist and kind of fell apart, but I think that could be due to the salsa I used. I also cooked them in a nonstick pan with no oil.

    Spicy Turkey Burgers
    Bon Appetit 8/04

    1 1/4 lbs ground turkey (normal package)
    3/4 c salsa, divided
    4 tbsp oil
    1/4 c chopped cilantro
    1/4 c minced shallot (I used onions and garlic)
    1 tbsp chipotle hot sauce
    1 tsp cumin
    1 tsp salt
    1/2 tsp black pepper

    Mix turkey, 1/2 c salsa, 3 tbsp oil, and rest of ingredients. Shape into 4 patties. Heat 1 tbsp oil in a nonstick pan over medium heat. Cook burgers about 3 minutes, flip and cover. Cook an additional 8 minutes or until done. Top with remaining salsa.

    This recipe looks very similar to one I made the other night, also from Bon Appetit (July 2001). This one is also very good. I just used the package of turkey & added some extra seasonings. I didn't bother with the tortillas either.

    SOUTHWEST TURKEY BURGERS

    Shredded iceberg lettuce topped with ranch dressing is the perfect side dish. End with scoops of lime sorbet drizzled with tequila and sprinkled with lime peel. Canned chipotle chilies are available at Latin American markets, specialty foods stores, and some supermarkets.

    10 ounces ground turkey
    1/2 cup plus 2 tablespoons chopped green onions
    6 tablespoons chopped fresh cilantro
    2 teaspoons minced canned chipotle chilies
    2 teaspoons ground cumin
    2 9- to 10-inch flour tortillas
    4 tablespoons purchased guacamole
    Purchased fresh salsa


    Gently mix turkey, 1/2 cup green onions, 4 tablespoons cilantro, chipotle chilies, and cumin in medium bowl. Form into two 7-inch-long by 21/2-inch-wide patties. (Can be made 8 hours ahead. Cover and chill.)

    Prepare barbecue (medium-high heat). Grill burgers until cooked through, about 5 minutes per side. Wrap tortillas in foil; grill until heated through. Unwrap tortillas; transfer to 2 plates. Spread 2 tablespoons guacamole down center of each tortilla. Place burgers atop guacamole. Sprinkle with 2 tablespoons green onions and 2 tablespoons cilantro. Fold each tortilla to partially enclose burger. Serve with salsa.

    Makes 2 servings; can be doubled.

    We had the Spicy Turkey Burgers (from the 8/04 BA) last night and thought they were terrific. I used a medium salsa instead of mild, but I still didn't think they were very spicy. Just a little hint of heat, which was nice. I served them with a spicy corn soup from the August issue of Food & Wine. Perfect match! A very tasty dinner that is sure to be repeated.

    Talking Try this one-- these were SO good!

    GOAT CHEESE-STUFFED TURKEY BURGERS WITH ROASTED RED PEPPER RELISH
    The goat cheese and relish keep these burgers especially moist. For a nice variation, omit the goat cheese, and top the turkey burgers with sliced Havarti or Monterey Jack cheese during the last few minutes of cooking. Set out bowls of pickles and olives, and pour chilled Chardonnay throughout the meal.



    1 1/2 pounds lean ground turkey
    6 tablespoons fresh breadcrumbs
    3 tablespoons fresh lemon juice
    2 teaspoons grated lemon peel
    2 teaspoons dried thyme
    1 1/8 teaspoon salt
    1/2 teaspoon ground black pepper
    6 tablespoons soft fresh goat cheese (such as Montrachet)

    6 whole wheat, hamburger buns


    3 tablespoons olive oil
    4 7-ounce jars roasted sweet red peppers, rinsed, drained, patted dry, chopped
    1 1/2 cups chopped onions
    3 teaspoons finely chopped garlic


    4 1/2 tablespoons cider vinegar
    3 tablespoons sugar
    1/4 teaspoon dry mustard
    1/4 teaspoon cayenne pepper


    For Burgers:
    Combine turkey, breadcrumbs, lemon juice, lemon peel, thyme, salt and pepper in large bowl. Mix well. Divide turkey mixture into 6 equal portions. Form 1 portion into two 4-inch diameter patties. Place 1 tablespoon goat cheese atop 1 turkey patty; place second patty atop cheese. Seal patties at edges to enclose cheese. Repeat with remaining 5 portions. (Can be prepared 4 hours ahead. Cover and refrigerate.)
    Prepare barbecue (medium-high heat). Grill burgers until cooked through, about 5 minutes per side. Grill hamburger buns, cut side down, until lightly toasted, about 1 minute. Place turkey burgers on bottom half of buns. Top burgers with Roasted Red Pepper Relish, then bun tops and serve.

    For Relish:
    Heat oil in heavy large skillet over medium-high heat. Add red peppers and sauté 2 minutes. Add onions and garlic. Cook until onions are tender, stirring frequently, about 5 minutes.

    Mix vinegar and sugar in small bowl until sugar dissolves. Stir vinegar mixture into red peppers. Mix in mustard and cayenne pepper. Season with salt. Continue cooking relish until all liquid has evaporated, stirring frequently, about 6 minutes. Cool to room temperature. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before using.) Makes about 2 cups.



    Serves 6.

    We had the Spicy Turkey Burgers last night and grilled them. They were so moist that I had to put them in the freezer for a while so that the DH could get them on the grill in one piece-just too moist to be able to grill otherwise. I only put 1 tablespoon oil in the mixture. These had a pretty good flavor, but not my favorite turkey burger.

    Chili con Carne Burgers

    3/4 cup canned black beans, rinsed and drained
    3/4 lb extra-lean (95% fat-free) ground beef
    2 Tbsp ketchup
    3/4 tsp chili powder
    3/4 tsp ground cumin
    1/4 tsp kosher salt
    1/8 tsp coarsely ground black pepper
    4 hamburger buns, toasted
    salsa
    4 leaves green leaf lettuce

    1. Coat grill or broiler rack with cooking spray; heat grill to
    medium-high for direct heat, or heat broiler.
    2. In a large bowl, mash black beans with a fork until most, but not all,
    are crushed. Stir in ground beef, ketchup, chili powder, cumin, salt, and
    pepper; mix to combine. Shape into four 3 1/2"-thick patties.
    3. Grill or broil 10 minutes, turning once, or until meat thermometer
    inserted in the sides of the burgers registers 160 F.
    4. Serve on buns with tomato salsa and lettuce leaves.

    Makes 4 servings.
    Per serving: 350 calories, 22g protein, 31g carbs, 14g fat, 4g fiber
