    Leftover salmon ideas?

    What's your favorite thing to do with leftover salmon fillet? I have 2 small servings & need to feed 2 people, and I'm feeling terribly uninspired. Salad topping is the best I can come up with today.

    Cold salmon with hollandaise or other savory sauce is delicious.

    Salmon patties are also good.

    Fresh salmon makes awesome sandwich filling -- just make the same way you would a good tuna salald.

    What Blaze said about the tuna salad variation, but core out a tomato and stuff the mix in it.

    Funny you should ask. I am making salmon tonight, and plan to use the leftovers to make Nigella's salmon cakes that have gotten very good reviews. Here's a link to the recipe...

    Not sure I have enough for the salmon cakes, but the stuffed tomatoes sound great. With couscous and a salad. Thanks for the inspiration!
