This appetizer from September was VERY easy to put together. I chopped everything ahead of time and then cooked it in about 7 minutes. Total prep time was only about 15 minutes.
I thought it was very tasty, but oddly, not spicy at all. I think my serrano pepper must have been a dud because there wasn't any zip at all to the dish. The contrast of the sweet pineapple to pork, onions and cilantro was very good.
I will definitely make this again but try more garlic and hope that the pepper I pick is hotter.
