    cream cheese spread with pineapple

    Does anyone have a recipe for this??? We had a catered breakfast the had this in the shape of a pineapple served with crackers. Several people were trying to figure out what was in it. We know for sure it has pecans or walnuts, cream cheese, pineapple and maybe powdered sugar as it was sweet.

    Crunchy Cheese Dip

    Serving Size : 8 Preparation Time :0:30

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    8 ounces pineapple chunks in juice
    16 ounces cream cheese -- softened
    8 ounces canned waterchestnuts -- chopped
    3 tablespoons chives
    1 teaspoon seasoned salt
    1/4 teaspoon pepper
    1 cup chopped pecans
    1 tablespoon chopped fresh parsley

    Drain the pineapple, reserving 1 tablespoon juice (you can use the sweetened variety or the type that is canned in its own juice). Combine all ingredients except for parsley, stir in reserved juice, and mix well. Garnish with parsley. Cover and chill.

    Serving Ideas : Serve with crackers.

    Pineapple Cheese Ball

    2 packages cream cheese -- (8 ounces each) softened
    1 can crushed pineapple -- (8 ounces) drained
    1/4 cup finely chopped green bell pepper -- or mixture of green and red bell pepper
    3 tablespoons finely chopped green onion
    2 teaspoons seasoned salt -- or to taste
    2 cups chopped pecans -- divided




    Combine cream cheese, drained crushed pineapple, chopped bell pepper, chopped green onion, seasoned salt, and 1 cup chopped pecans. Chill in refrigerator until firm then shape into a ball. Just before serving roll pineapple cheese ball in remaining cup of pecans. Serve pineapple cheese ball with assorted crackers. Pineapple cheese ball makes about 3 cups of cheese spread.

    Pineapple Cream Cheese Ball Recipe

    2 cream cheese -- (8 oz.) softened
    1 can crushed pineapple -- (8 1/2 oz.) drained
    2 C. chopped pecans
    1/4 C. chopped green pepper
    1 T. chopped onion
    1 T. seasoning salt

    Cream the cream cheese and stir in pineapple. When smooth, add 1 cup nuts, green pepper, onion and seasoning salt. Chill. Form into 2 balls and roll cheese ball in rest of pecans to coat the surface. Chill until ready for serving. (Set out until room temperature just before serving.) Serve with raw vegetables and / or crackers.

    Thanks Cafe Latte for posting those recipes. Kroger had a sale on Philly 1/3 less fat cream cheese, and it seems my husband and I both thought we needed some, so now we have 8 pkgs. of it! What's a girl to do with all that cream cheese?

    The dip sounds yummy. I am always on the lookout for new dip recipes.

    I made the Date-Orange-Cream Cheese spread from the November CL this past weekend. It's quite wonderful, think "yum - instant dessert!," and I've been enjoying it every morning on a toasted WW English Muffin for breakfast.

    Highly recommended!

    Date-Orange Breakfast Spread

    Enjoy this spread over bagels, waffles, English muffins, toast, or apples for a healthful, great-tasting breakfast in an instant.


    1 cup finely chopped pitted dates (about 1/2 pound)
    1 tablespoon finely grated orange rind
    2 tablespoons fresh orange juice
    1/2 teaspoon ground cinnamon
    1/8 teaspoon salt
    4 ounces 1/3-less-fat cream cheese, softened

    Combine all ingredients, stirring until blended. Chill 30 minutes.
    Note: Store, covered, in the refrigerator for up to two weeks.

    Yield: 1 3/4 cups (serving size: 1 tablespoon)

    Thanks for posting the date spread. Missed that one somehow, and I've been looking for some way to use up some dates (without making more fruitcake).

    Someone here at work found this recipe from Cooks.com. It is closer to what we tasted with the exception of the chocolate chips.

    SWEET CHEESE BALL




    2 packages of cream cheese, softened
    1 package of vanilla instant pudding
    1 cup powdered sugar
    1 can of crushed pineapple, drained
    1 cup finely crushed pecans
    1/2 package of mini chocolate chips
    Graham cracker stix
    In a medium bowl, mix together the first four ingredients. Freeze overnight.

    After removing from freezer, mold mixture into a ball shape.

    Mix the pecans and chocolate chips together. Roll ball in mixture. Serve cheese ball with grahams.

    My mom used to make one and serve it in a hollowed out half of a pineapple. It was really festive.

    We lost our recipe, but it was close to the first one.
