    Leek substitute?

    My grocery store is short on produce due to the snow. can I substitute Shallots for Leeks in a basic potato cheese soup? Or, can you recommend anything else?

    I'd use half of what the recipe calls for when subbing shallots.

    add onions as a possible sub. Your soup will be fine with any of these.

    Because leek is a bit like an onion, but a little like garlic, I generally add a bit of each if I don't have leeks. I'd use a mild onion, if you have it, and not TOO much garlic -- just because leeks have a more subtle flavor.
