I found some queso fresco in the freezer from last March when I made the CL roast chicken chimichangas. I was thinking of using it for the pinto bean nachos from CL J/F 05, but I don't know if it will be any good having been in the freezer that lon. I thawed it and it crumbled fine, but I haven't tried it . TIA for any input!
