    Thumbs up June: Ginger-Peanut Chicken-Salad Wraps

    I made this last week and even my eight year old son liked it! I decreased the amount of ground red pepper because I know he doesn't like spicy things. I also cut the chicken into bite size pieces before cooking it so that it would cook faster. It was still good and I think it would be even better with the full amount of pepper. The recipe was quick to make and best of all it does not need to be served hot so it makes a great meal for summer especially when you have to work supper around softball and soccer games!

    Thanks for the feedback, Mary. My husband doesn't like spicy food and I was hesitant to try it.

    I also agree that this is a keeper. Made it a second time and used the chicken as a stuffing in pita shells for lunch. Really good!

    I made these last week; both my husband and I thought they were great! My 13-year-old daughter passed, but she doesn't like cucumbers or food with alot of ingredients mixed together (sigh). Definitely a keeper!

    I made this wrap last week and we decided that these were so much better than anything you can get in a burrito restaurant. I was able to use fresh lettuce from the garden that was a big plus. I consider this one a keeper.
