    Thumbs up Rev: Cashew Vegetable Stir-Fry

    I tried this recipe out last night, taken from a food manufacturer's website. Fantastic!! Quick to make and really delicious, plus I got to feel virtuous for all those vegetables I was consuming. Big thumbs up from Dr Love too.

    I cut the canola oil back to 1 teaspoon, just chopped up ordinary bok choy, and used snow pea shoots rather than bean sprouts. I served it with noodles; the original suggestion is for serving with rice, but there isn't much in the way of sauce with it, and we both agreed probably would be a bit boring with rice.


    Cashew Vegetable Stir-Fry

    2 teaspoons canola oil
    1 medium onion, sliced
    2 cloves garlic, crushed
    1 teaspoon fresh grated ginger
    1 red capsicum, sliced
    125g snow peas
    100g fresh or canned baby corn, halved lengthwise
    1 cup bean sprouts
    1 bunch baby bok choy, chopped
    1 tablespoon soy sauce
    1 tablespoon sweet chilli sauce
    3/4 cup raw cashews

    Heat oil in a wok or frypan. Stir-fry onion and garlic for 1 minute.

    Add ginger and sauté for another minute.Stir through capsicum, snow peas and corn. Stir-fry for another 2 minutes.

    Add remaining ingredients and stir-fry for another 2 minutes, or until heated through.

    This sounds good, but I don't know how much of some of the ingredients to use

    Are you thinking of the snow peas and corn? The 100g of baby corn would be a little less than 4 oz., and the 125 would be about 5 oz. Since they are veggies, the exact amount is not critical. You just need to get proportions in scale.

    That would be a pepper -- a sweet red bell pepper.

    Oops, sorry guys - normally I "translate" recipes before posting them, but forgot to this time.

    Blame the cold virus that Dr Love so nicely passed on to me - my brain is seriously cooked at the moment.

    You're welcome. Now we just need to all try it. Think my cashew loving 8 yr old would try new veggies because of the cashews???
