Hi I got some old magazines (Southern Living) yesterday at a church bazaar & found this great eassy recipe for those needing ways to use theur tomatoes
GRilled tomatoes with basil vinaigrette
(july 97 S Living)
Serve this with grilled fish or chicken or make them part of a colorful veggie plate
3 yellow tomatoes
3 red tomatoes
3 tab olive oil divided
1/4 tsp salt
1/4 tsp ground pepper
2 tab white balsamic vinegar
2 tab chopped fresh basil
Cut tomatoes in half Thread into skewers alternating colors. Brush with 1 tab oil, sprinkle with salt & pepper.
Grill covered with grill lid over med heat (300-350) 10 minutes turning skewers often
Combine remaining 2 tab oil, vinegar & basil. Drizzle over kabobs. Garnish if desired with fresh basil sprigs
Calories 87 Serves 6
Note wood skewers should be soaked 15 mins to prevent burning
