    Thumbs up Review: Golden Potato-Leek Soup, CL October 2005

    I didn't see a review of this soup when I did a search, although a lot of people said they wanted to try it. I made it tonight, and it got a thumbs-up all around. I followed the recipe to a T, but I did not make the croutons. I served it with a spinach salad for a light supper. It's not as hearty as the Baked Potato Soup, which is another one of my favorites. Definitely a keeper!

    I made it tonight too and reviewed it on my blog- but overall I liked it. I did make the toasts to go with it though- and they really added to the soup. I did make a few changes, I used homemade chicken stock instead of the canned veggie, and I used half-and-half instead of the whipping cream. We'll see how the leftovers hold up and reheat- that will ultimately determine whether or not I make it again. But I am a sucker for a good potato leek soup, and this one did not disappoint.

    If I made it again, I would just use all broth instead of half water and half broth.

    Cool! Thanks for the reviews. I'm planning to make this in a couple of weeks when my mother visits, but maybe I'll try it sooner!

    It's about 45 in Boston this morning; soup weather is definitely here....

    I made this last night, although I did skip the toasts and just served it with bread and a green salad. The soup itself was just okay. If I made it again, I would use all broth. (I used a carton of chicken broth and a cup and a half of water.) I doubt I'll make it again--I much prefer CL's Baked Potato Soup.

    I made this soup last week and we thought it was very good. I also made the Cheddar toasts and served it with a salad.
