    ISO Waffle Recipe from "Deaf Smith Country Cookbook"

    Hopefully someone out there has a copy of the Deaf Smith Country Cookbook. My sister used to have the cookbook and loved the waffle recipes from this book. She's been hankering for their waffles.

    If anyone has this cookbook and would be willing to post the waffle recipes, it would be greatly appreciated.

    Yes, believe it or not, I have the book. published 1973. There are several waffle/pancake recipes. anything more specific to narrow it down? there are whole wheat, quick yeast, overnight soy, apple pancakes. buckwheat, sourdough.

    I just got an e-mail back from my sister. Here is what she said:


    "Oh, gosh! They had 3 or 4 recipes on a couple of pages that, as I
    recall, had no flour in them, but I could be wrong on that. The batter
    was made in the blender. One or more had nuts. One favorite had
    cornmeal. Does that match with anything in her book? THANKS to you and
    your correspondent! -Heather"


    Would it be possible to post any recipes that seem to fit the bill?

    Thanks in advance. I'm going to have to make a copy for myself once you pass them along. They must be GOOD!

    You've prompted me to buy a copy from Half.com, and I'd thought I wouldn't be buying anymore cookbooks for a while. (It was only a few dollars, but still.)

    Sounds like a good one.

    I've got the cookbook in front of me and no recipes made in a blender. Choices are:
    overnight soy
    quick mix whole wheat(with a corn meal substitution)
    quick yeast
    whole wheat

    I'm waiting to hear back from my sister. Too bad there is no recipe using the blender. That sounded REALLY no fuss.

    The overnight soy pancakes/waffles used some corn meal. most of the others used "corn germ oil". IIf it said to "beat" the batter maybe someone just used a blender?? this is the best guess... I'm gone until sometime on thursday.

    Overnight Soy Pancakes or Waffles
    3/4 cup soy flour
    1/4 cup stone ground corn meal
    1 c whole wheat flour
    3 tsp low sodium baking powder
    1/8 tsp sea salt

    1 cup milk
    2 eggs
    optional: 4 TB raw honey

    Mix dry ingredients.
    Beat liquids together. stir flour mixrture into liquids.
    Refrigerate over night
    Add 1 cup warm water in the morning
    Bke on moderately hot griddle

    Well, DANG ... these are not the ones. I must be misremembering which cookbook it was in. Please thank her/him very much. Sorry to lead you on a wile goose chase! I'll have to make up my own recipe.


    I REALLY appreciate all the help you've sent my sister's way. She always hears me talking about you folks on the bb. How helpful everyone is and what a wonderful resource it is for recipes and knowledge about food. When she asked me to pass on her request, I KNEW someone out there would be able to help. That is the way it always is here. I've said it once and I'll say it again, I LOVE this bb.

    Hey, no problem! I haven't used the book in ages , but keep a couple of old books for nostalgia sake. Like the "diet for a small planet" books. I did cook from it when I was first learning how to cook & am going to take a look thru to see what I used to make from it. so it was kind of fun. hope your sister locates what she's looking for.

    This has been bugging me since this thread popped up.

    I know "Deaf Smith County" for some reason that I can't recall, nothing to do with this particular book.

    What might that be and where is it?

    There is a Deaf Smith county in the Panhandle of Texas, south of Amarillo - I used to live there years ago.

    Any word where the recipe you were hunting for might have come from?

    I got a copy of the Deaf Smith Country Cookbook (cheap from half.com) based on this discussion, and am enjoying it so far.

    Wouldn't mind another suggestion, lol.

    My sister was actually the one that asked me to check with ya'll. She was SURE it had come from the Deaf Smith Cookbook. She has, so far, been unable to remember where it DID come from. If it springs to mind, I'll pass it along. Glad you're enjoying the cookbook AND that you got it cheapo!
