I use vegetable oil just to cover the bottom of the pan. I do have to add more after a while but I find that if I had too much at once, the latkes just absorb more than necessary. The important part of making latkes is using russet potatoes. They have a high starch content which helps the latke mixture stick together. Enjoy!

I also like to use peanut oil because it has a higher smoke point. You can get it much hotter so the latkes absorb less oil.
