    Post Need Blueberry Crisp Recipe

    Does anyone have a fruit crisp recipe that is very low in calories. I'm craving sweets (possibly due to this icky weather) and want to make a warm, but light treat for tonight. Any ideas would be greatly appreciated!!

    There were a bunch of great crisp and cobbler recipes in the July 2000 issue, including a blueberry one that I made that was great. Sorry I don't have the issue in front of me but maybe someone else does and can post.

    There were also a bunch of crisp recipes in October 2000 (all apple-based, I believe).

    Any sort of crisp will do, just looking for hints to make the topping. The key here is low cal, as I'm doing Weight Watchers and I'm low on points! (eek!)

    BLUEBERRY CRISP

    Recipe By :Prevention Magazine
    Serving Size : 1 Preparation Time :0:00

    Crisps Desserts
    Fruit Low Fat


    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    4 Cups Blue Berries
    1/2 Cup Sugar
    2 Tablespoons Cornstarch
    2 Tablespoons Lemon Juice
    1/2 Cup Rolled oats
    1/2 Cup Flour
    1/4 Cup Brown sugar
    2 Tablespoons Walnuts -- Toasted/chopped
    6 Tablespoons Butter

    Preheat oven to 375° (350° convection).
    Coat a 1 qt. casserole with nonstick spray. In a large bowl, mix blueberries, sugar, cornstarch and lemon juice. Spoon into the casserole. In the same bowl, mix oats, flour brown sugar and walnuts. With a pastry blender, cut in the butter until mixture resembles cornmeal. Sprinkle over berry mixture.
    Bake for 45 minutes or until the crisp is lightly browned and bubbling.


    Yield:
    "1 Quart"



    NOTES : For variety, try other berries - or a mixture
    Could also be used with other cut up fruits.

    Amount Measure Ingredient -- Preparation Method
    3 Cups Blue Berries
    1 Tablespoon Brown Sugar
    1/2 Tablespoon Unbleached flour
    1/2 Tablespoon Lemon Juice -- Freshly ground
    1/3 Cup Unbleached flour
    1/4 Cup Brown Sugar -- Packed
    1/4 Cup Regular Oats
    1/2 Teaspoon Cinnamon
    2 1/4 Tablespoons Butter -- Cut into sml pieces
    1 Cup Vanilla Low Fat Frozen Yogurt

    Preheat oven to 375° (350° convection)

    Combine first 4 ingredients in a small bowl, spoon into baking dish.

    Combine 1/3 cup flour, 1/4 cup brown sugar, oats and cinnamon, and cut in the butter. Sprinkle over the blueberry mixture. Bake at 375° (350° convection) for 30 minutes or until bubbly. Top each serving with 1/4 cup frozen yogurt.

    Yield:
    "4 Servings"

    I just wanted to thank Curleytop for posting the Blueberry Crisp from Prevention Mag. I finally got around to trying it last night. It was delish. I know there was been talk lately about soupy cobblers/crisps but the filling set up fine. The topping was like a warm oatmeal cookie. Yum. It was the perfect dessert for the cool nights we've been having. The only changes, I used light butter (it's what I had on hand) and I only used 5 TBS. Thanks again for a great recipe!

    Hi Traci June,

    I do WW as well. I found this on a WW support board and have heard may people rave about it.

    -----------------------

    1 1/2 - 2 C blueberries
    1/4 C rolled oats
    3 TB splenda
    1 TB cornstarch
    1/4 tsp cinnamon

    Spray two small oven proof bowls with non-stick spray. Mix 2 TB splenda and cornstarch together in small bowl. Pour over blueberries, mixing gently to coat. Divide blueberry mixture into the two sprayed bowls. Mix together oats, 1 Tb splenda and cinnamon. Sprinkle evenly over the two bowls of blueberries. Bake @ 375@ for 25 minutes.

    2 pts. per bowl
    There are two times of day - meal time & in between time.

    EW 2002 had a Cherry-Almond Crumble that is a great crisp. There's only 1 T. of butter and 1 T. of oil.

    However, I've made it with blueberries and left out the 1 T. of oil, just adding another T. of orange juice concentrate.

    It's really good and really really low fat for crisp.
