    I know this is 2 days early but I am leaving tomorrow for vacation and thought I would post my list since it is done.

    Haven't actually cooked in a couple of months (!) and am just getting back into it in the last couple days, so not much to post:

    Shrimp Arrabbiata (CL March '06)
    Raspberry-Cream Cheese Muffins (CL, 2002?) - bit of a variation on these. Instead of mixing raspberries into the batter (frozen we ungodly expensive) I filled the plain cream cheese muffins w/ raspberry preserves.

    OK, with a week of vacation, and then 4 days in the hospital, followed by a slow recovery, February ain't looking so good. I'll make up for it in March. Planning one or two new recipes for tomorrow, so might be back to edit.

    PENNE A LA VODKA CASSEROLE

    4 tablespoons extra virgin olive oil
    1 pound sweet Italian sausage, cut crosswise into 1-inch slices
    1 pound hot Italian sausage, cut crosswise into 1-inch slices
    4 cups thinly sliced onions
    1 3/4 teaspoons salt
    3/4 teaspoon freshly ground black pepper
    1/4 cup thinly sliced fresh basil leaves
    1 tablespoon minced garlic
    1/2 cup vodka
    Two 16-ounce cans whole tomatoes, crushed with their juice
    1 teaspoon Emeril's Original Essence
    1/2 cup heavy cream
    1 tablespoon olive oil
    1 pound penne pasta
    15 ounces ricotta cheese
    1 cup grated Parmigiano-Reggiano cheese
    1 1/2 cups grated mozzarella cheese
    Crusty bread, for serving

    Preheat the oven to 350ºF.

    Heat 2 tablespoons extra virgin olive oil in a large skillet or saucepan over high heat. Add the sausages and cook, stirring, until browned, 4 to 5 minutes. Add the onions, 3/4 teaspoon salt, and the black pepper. Cook, stirring occasionally, until the onions are just soft, about 4 minutes. Add the basil and garlic, and cook, stirring, for 2 minutes. Add the vodka and tomatoes, reduce the heat to medium-low, and simmer, uncovered, stirring occasionally, for 40 minutes. Add the Essence and heavy cream, stir to mix, and simmer for 5 minutes. Remove from the heat.

    To cook the pasta, combine 4 quarts water, the olive oil, and the remaining teaspoon salt in a large pot over high heat. Bring to a boil, add the pasta, and cook until al dente, 12 to 14 minutes. Remove from the heat and drain well. Combine half of the ricotta cheese and half of the Parmigiano-Reggiano with the remaining 2 tablespoons extra virgin olive oil in a large mixing bowl. Add the pasta and toss to coat evenly. Add the sausage mixture and mix well. Add the remaining ricotta cheese and the remaining Parmigiano-Reggiano and mix well.

    Transfer the mixture to a 9 x 13-inch baking dish. Sprinkle with the mozzarella cheese. Bake until bubbly and golden, about 45 minutes. Remove from the oven. Serve warm with crusty bread.

    Makes 10 to 12 servings

    But it looked so good I saved it in my computer. I think I'll take it to a friend who just had a baby.

    I kept track again this month. Yeah! I relied on a lot of "non-recipes" this month (grilled chicken, turkey burgers, spag., roasted veggies, salad, salad and more salad), so although it appears that all we ate were baked goods, that wasn't the case. No clunkers, though.

    I was not able to make much this month, between our fridge dying and kitchen being remodeled, I cooked my first meal this weekend. It felt so good! I was going through cooking withdrawl.
    I love cooking with wine sometimes I even put it in the food.

    Pineapple Bran Bread

    1/2 cup flour, all-purpose
    1 cup whole wheat pastry flour
    1 1/4 cups All-Bran cereal, extra fiber
    1/4 cup granulated sugar
    2 teaspoons baking powder
    1/4 teaspoon salt
    2 tablespoons vegetable oil
    2 whole eggs
    1/3 cup honey
    1 1/4 cups crushed pineapple in juice -- undrained

    Preheat oven to 350. Spray a 9 by 5-inch loaf pan with cooking spray.

    In a large bowl stir together flour, bran cereal, sugar, baking soda and
    salt.

    In a separate bowl, using an electric mixer, beat oil and eggs until
    combined. Add honey while mixing. Stir in pineapple. Pour mixture over dry
    ingredients and stir until just combined. Spoon into prepared pan.

    Bake in a preheated oven for 70 to 80 minutes (mine only took 50) or until
    a cake tester inserted in the center comes out clean. Let cool in pan on a
    rack for 10 minutes. Remove from pan and let cool completely on rack.

    Variation: substitute brown sugar or molasses for the honey.

    calories from fat); 3g Protein; 29g Carbohydrate; 4g Dietary Fiber; 35mg
