I made a spice cake from Gourmet 3/06 but used a caramel frosting from Cake Mix Magic instead of the apple mixture suggested. Anyway the cake was moist and nicely spiced and although sweet, we love the frosting!

Brown Sugar Spice Cake with Caramel Frosting -

1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/8 teaspoon cloves
1 stick butter, softened
1/3 cup brown sugar, packed
1 large egg
1/2 cup maple syrup, dark
1/2 cup sour cream
1 teaspoon vanilla
Caramel Frosting
1/4 cup butter
1/2 cup brown sugar, packed
1/8 cup milk
1 cup confectioner's sugar
1/2 teaspoon vanilla
Cake (from Gourmet 3/06-deleted the cream and caramelize apples) ( Frosting- Cake mix Magic)
350 butter and flour (or sugar!) 8x8 or spring form pan
Beat butter and brown sugar to pale and fluffy.
Beat in egg
Add maple syrup and sour cream and vanilla, beat to combine
Reduce to low spead and add dry ingred that have been combined/mixed together with a wisk
Mix just to incorporate. Don't overmix.
Bake to golden brown, 35 to 40 min.
Cool in pan 10 min then turn out. Cool completely then frost.
Frosting
In a med. saucepan, add butter and brown sugar
Cook, stirring constantly over medium heat until mixture comes to a boil.
Add milk and briing back to a boil.
Remove from heat
Stir in confec sugar and vanilla
Spread on warm or cooled cake.
Sweet and wonderfully moist. good spice.
